@jon French vowels are sensitive to whether they are in the final syllable of a word, and whether there is a following consonant (e.g. see the "loi de position"). This particular contrast is analogous to the difference between "protège" and "protéger".

@AngloPeranakan I know. It’s not the sound difference I don’t understand. It’s why you’d change it this way. It seems illogical.

Because the accent describes the pronounciation of the e. In Liège it’s close to the German ä. In liégeoise, it’s an actual e (simple e w/o accent is close to the German ö ou more so to the e at the end of words).

Why that vowel shifts exactly, I can’t tell. But after a while of speaking French it feels logical.

@cweickhmann sure I get the sound change the accent change makes. But if the gaufre is from Liège you ought to say it like Liège not Liége 🙂

@jon previously Liège was written Liége and pronounced /lje̞ːʒ/. The adjective liégeoise is still pronounced
\lje.ʒwaz.
