I've decided I'm not a big fan of Fernet when it's the dominant flavour. It's good when it adds some extra dimension to a mix, but not when it's in charge.
#Cocktail - Beefeater en Paris (aka Absinthe Martini)
60ml Gin, 15ml Dry Vermouth, 5ml Absinthe, Star Anise
My terrible attempt at a name. Still working on that. "Cockney in Paris". "St Jacques" after the Little French Club opposite Duke's in St James. Something that combines Clerkenwell, Gin Street and La Coupole?
Weird green colour from the brown cognac mixed with blue Violette. Not unpleasant, but strange. Violette is a pretty odd flavour. This one's not as nasty as some with more than 5ml but not really recommended.
45ml Gin, 22ml Red Vermouth, 22ml Green Chartreuse, Orange Bitters, Lemon twist, Cherry (or Olive)
Originally 1890s, 25ml equal quantities. This is the Dale Degrof re-invention. The Ethicurean (now closed) added muddle rosemary and a sprig as garnish.
Then there's the Dead Rabbit version. 45ml Gin, 45ml Red Vermouth, 15ml Green Chartreuse, 2 dash Orange Bitters, 2 dash angostura, 2 dash Absinthe, Orange peel.
