Ingredients:

• 1 lb Maryland 🦀 blue crab meat (preferably female crabs for the roe)
• 2 tablespoons unsalted 🧈 butter
• 2 tablespoons all-purpose 🍚 flour
• 1 small onion, finely chopped 🧅
• 1 small carrot, finely chopped 🥕
• 1 celery stalk, finely chopped 🌿
• 3 cups whole 🥛 milk
• 1 cup heavy 🥛 cream
• 1/4 cup dry sherry 🍷
• 1/4 teaspoon paprika 🌶️
• 1/4 teaspoon cayenne pepper 🌶️
• Salt and freshly ground black pepper to taste 🧂🧂
• Crab roe (from the female crab) for garnish 🦀
• Chopped fresh parsley for garnish 🌿
