@jpm have you seen what's available at a good Chinese grocer? Not just shiitake, they often have chanterelle, morel, blazei, bamboo fungus (really funky!), monkey head / lion's mane, tea tree, velvet antler, nameko. Great flavours.
Of course, also snow fungus and black fungus, but they're more for texture than flavour.
Not getting me to try the cordyceps any time soon though.
@trib unlikely at either of the main two, especially rural. You might find it in a FoodWorks or IGA, especially the more bougie ones with large weird-and-wonderful food sections.
But, they’re dried, so they can be chucked in the post with no issues. If Rich Uncle Jeff’s Book And Underwear And Cloud Server Emporium doesn’t have them for next-day* delivery I’d be surprised.
