You don't have to trim the seam allowance that gets turned under if you simply offset the edge of the fabric. You turn the longer edge over and under the shorter edge, fell down with whipstitch, and the raw edges get encased and secured.

At the top of the photo the seam allowances are still hanging free, in the middle it has been folded over with fingers, lightly finger-pressed to create the fold, then being held while sewing it down. The needle used is short, curved into a bow shape, a bit stout and has red linen thread threaded into it.

The seam itself looks fairly neat on the right side, with the evidence of hand stitching recognisable to those familiar with it. Sini's hand is holding the seam flat, because linen gets all crinkly when held in your hand to sew it.
