Before I napped and retired to the blanket fort with dogs and my book, I put Lady grey in the pitcher and it's in the garden turning into lovely sun tea. I'm also out of dried mint, how is this even a thing, I... need to fix this. Yes I have fresh mint growing in the garden but it doesn't taste the same in tea. Anyway, now it's time to find my knives and chop veggies for my salad. No idea what doing for dinner. I am feeling profoundly uninspired. It might be taquito night! 🤣🧙‍♀️🔪

OK, I haven't sunk to the lack of motivation depth that is taquito night, but I am having homemade turkey burgers with loaded baked potato pierogies I bought from Aldi's! So it's a compromise! I just brought the tea in from outside and it looks delicious! I guess I will find out tomorrow

I make a huge batch from scratch once a year. Homemade dough, the whole shebang. I stuffed mine with herbed potatoes and then lightly saute in vegan butter and brown sugar so they are sweet on the outside, but herbed and savory on the inside.

@KentuckyConjurer @Pawpower I need to learn how to make them so that I can have them again. I can't trust store brands to not put cheese in them even if it's just advertised as potato and onion.

For the filling, I boil potatoes in veggie broth (tastes so much better), then drain, add plant milk, and any kind of herbs you like. I will often use oregano, basil, and thyme, add garlic bits, sometimes shallots.
