Today is Shemini Atzeret / Simhat Torah. It was meant to be 1 of the happiest days of the year. At approximately 9:30am, while my congregation was in the middle of holiday prayers, preparing to celebrate w/ our Torah scrolls, the air raid siren blared. First batch of habanero sauce just turned out: pure fire. Gentle sweetness, assertive heat that doesn't outstay it's welcome, deep funkiness & intense fruity flavour 🌶️🌶️🌶️🌶️

~30-40 ripe red habaneros
5 cloves garlic, cracked & sliced
1 pear, chopped
2tbsp Olive oil

Ferment halved peppers in 2% brine for ~7 days. Strain into heavy-lidded pot, reserving brine. Add pear & garlic, just cover with brine. Bring to boil & simmer 8m. Blend, dripping in oil. Add sugar if desired. Salt to taste.
