I’m vegan! The only egg I can’t find a suitable substitution for is a sunny side up egg, but honestly, the only good part of that was the yolk and there are recipes out there for that. JUST Egg makes for an awesome scramble or breakfast sandwich, I pretty much use flax eggs exclusively in baking for moisture/light binding needs, and aquafaba works perfectly for meringues, mousse, and mayonnaise. I’ve also been to some restaurants that make a mean tofu scramble. I was pretty skeptical, but they’ve really grown on me.
There is definitely a gap with regards to cheese. Now that I’m used to vegan cheese, it’s not so bad, but texture-wise, vegan cheese still has a ways to go. I think we’re close to getting there though between what Miyoko’s is doing, Violife, and the animal-free milk protein Perfect Day has. I’ve tried both Brave Robot ice cream and Modern Kitchen cream cheese and they are nearly indistinguishable from traditional dairy. A couple of milks with this protein have popped up but I haven’t been able to find them in a store. The minute I can get my hands on one, the first thing I’m going to try to make is a mozzarella.
Anyway, if you have any specific things you’ve had a tough time replicating regarding eggs, I’m happy to give you any tips I have! It took me a while to switch, but now that I know the substitutes it’s pretty easy. 😁
I’m so jealous of your vegan junk food options across the pond! I heard you got vegan Krispy Kremes which were my absolute favorite before going vegan 😭
Starting small and building up is a totally valid way to get to your goals if your eventual goal is veganism or vegetarianism. It took me a while to get all my old recipes converted over, but it was definitely worth it to me.
Story of Seasons: Friends of Mineral Town. I have big completionist and FOMO tendencies in games like that and get super distracted with trying to do all the things before advancing the storyline. Similarly, Pokémon: Legends of Arcaeus.
