Making my favourite dish for dinner with a friend tomorrow — lamb shanks very slowly cooked in tomato and stock with preserved lemon, green olives, garlic and harissa. I actually don't slow cook a lot as I find it often results in a same-y caramelised sweetness but you don't get that with this dish, not at all.
