Sooooo pleased with my first attempt at huevos rancheros!

I made these tortillas last night.

I softened each in a warm pan with butter and let one side get toasty while each respective topping warmed up — refried pinto beans on the bottom, extra sharp cheddar on the top. Also here is some lime Greek yogurt and homemade restaurant style salsa.

Enjoying it way more than I hoped I would. Not bad for sorta vegetarian. (There’s lard in them beans.)

    I learned/saw how to make tortillas in Oaxaca in 2016 so it feels great to finally be doing it.

    When the woman taught me, she said the old Mexican proverb was a woman whose tortillas didn’t puff up would not marry. LOL.

    I’m (happily) single but mine are some seriously puffy bastards.

    Quesadilla later? Oh yeah.

    A burrito sized tortilla as one giant 10” wide puff, on a cast iron pizza pan-cum-comal
    10” tortillas with just a bit of charring on all the brown spots — perfect!

    Sometimes you get a that just keeps giving. Tonight’s ended up being one of the most colourful sunsets I’ve ever seen.

    This is the Salish Sea in Victoria, BC, (Canada) looking toward Port Angeles, Washington.
