Words for hire. Canadian, so… funny-ish? West Coast. Foodie. Oxford commas are a hill I’ll die on. Traveller. Anti-Nazi, pro-science.

In 2015, I sold everything to travel the world for over 4 years. I stopped 3 months before the pandemic. 25 countries in the Before Times? Worth it.

I share photography, tasty things, & cooking tips. I'm also political, left-leaning. Victoria, Canada.

And I swear. A lot.

Turned out to be a lovely dinner, for someone who’s using groceries up and getting crafty.

Basmati cooked with orange juice, ras el hanout, & turkey stock, topped with hazelnuts, dates, herbs, orange zest, white pepper, & black pepper.

Homegrown greens with tomatoes, accompanied by a harissa-rubbed pork loin chop, & a splash of Greek yogurt.

OMG, cleaning out the fridge & I’ve made an amazing curry-ish soup. It has cinnamon, coriander, cumin, chili powder, turmeric, hot pepper pickle brine, & so many other seasonings.

But I tossed carrots, onion, & celery in bacon fat, salt, & chili powder, then hard roasted ‘em in the air fryer.

Meanwhile, I cooked out my spices with ginger & garlic, then added 2 old apples. Finished with stock & coconut milk, & a bit of coconut aminos (or soy sauce) & lemon juice. It’s magic.

A pot has shrivelled, charred veggies and aromatics — just before covering with stock

Amazing Persian-style stuffed peppers. (Do not do 2 teaspoons of saffron! Just a pinch will do.)

I used Baharat spice blend instead of the combo they list — it’s essentially the same. Either will work.

I also used Michael Solomonov’s method of washing and soaking the rice, rather than cooking it beforehand.

I chose to soak the rice in 2L boiling water and I let it sit for 4 hours. With thicker bell pepper walls, I baked it for 75 minutes & it was perfect. https://jmoreliving.com/2019/02/13/persian-inspired-stuffed-peppers/

Michael Solomonov has won 5 James Beard awards, and his Israeli restaurant Zahav was voted as one of the top 40 most important restaurants of the last 20 or so years.

So, if he says don’t cook the rice, I figure I’d listen, and I’m so glad I did. I hate mushy rice. It was perfect. If the peppers had thin walls, then it might be more challenging.

@jhv and medicinal! Like, oof. My pinch was almost too much.

snarkysteff,
@snarkysteff@mastodon.online avatar

@jhv I can’t figure out what the mistake is. 2 pinches? 2 threads? None of those make sense. It’s so odd. A pinch is, what, $2-3? Maybe more? Crazy.

Last night’s meal was a case of eyes bigger than belly, so the smaller of the two pieces of roast pork went into a sandwich tonight.

Lightly taste bread
Avocado
Tomato
Homegrown lettuce
Calabrian chili crunch mayo
Oregano/garlic roasted pork

The bread’s my homemade gluten-free loaf. Perfect quick dinner before a long first-real-spring-night walk.

The best cheat meal I have made in a long, long time.

Pork tenderloin marinated for two days in garlic, oregano and yogurt.

Hand-cut twice-fried shoestring fries. Chive-lemon mayo for dipping. I ran the potatoes through a mandolin for thick slices, then cut them with a knife for fries.

Homegrown lettuce salad.

Misjudged the amount of pork so half is going in a sandwich tomorrow for lunch.

@aetataureate I used to drink a bottle of wine a day, but these days might have a drink every two months. I enjoy sobriety.

Luckily, at 50, people my age group are largely cutting back on booze & have more understanding for choosing sobriety on any given day.

If reading this & you’re hosting people who don’t drink, make a lovely simple syrup to mix with soda water & your sober friends will love you.

I found this recipe today & will be making a jar for myself for summery drinks.

@fallcounty @aetataureate that sounds a lot easier than fucking around with simple syrup! Nice.

    snarkysteff,
    @snarkysteff@mastodon.online avatar

@aetataureate @fallcounty oh, I think “sobriety” is a moniker for those committing 24/7. I drink about 98% less, literally, but I’m able to do indulge on special occasions without issues.

Others, obviously, cannot. I admire the difficult choices they overcome.

    But thank you.

And we all need to speak up about respecting people’s choices and needs in diet, etc. it’s frustrating how hard it is to navigate these things socially, sometimes.

    snarkysteff,
    @snarkysteff@mastodon.online avatar

@aetataureate Yeah, I wonder if I'll eventually go no booze, but I doubt I'll ever drink more again on a regular basis.

I think once you start cutting back on bad shit, you recognize how much it affects you, and you start wondering how that was ever a "normal" baseline for you.

I think smoking's definitely like that. I was able to casually do it for years, then never smoked for probably 15-plus years, until it just "made sense" for a week in Cambodia in 2017, and not since. Hah.

Craving a snack or coffee? Here are the top 5 unionized places to visit in Vancouver — including Cartem’s Donuts and Earnest Ice Cream.

    Support unions.

(By all means, feel free to share why you don’t like unions in a world where billionaires are destroying the social fabric, so I can block you.)

Don’t toss your sprouted old, drying garlic. It’s fine in marinades.

Add as much as you like to yogurt or buttermilk with seasoning or herbs, and blast it in the blender so it purees.

I did that today with a head of old garlic, half a cup Greek yogurt, and a half cup fresh oregano from the garden, and generous salt.

Turned out it was a nice (easy) pork marinade.

Today I learned that Rupert Grint always wanted to have an ice cream truck, so when he had his first big Harry Potter payday, he bought one.

And then he started giving kids ice cream for free.

My friend was given duck eggs.

My tip was to make duck egg mayonnaise. It’s the same, but the duck yolk emulsifies better so you have to add more oil and make a larger batch.

You CAN make homemade mayonnaise that lasts two weeks, but you must ferment it, otherwise it only last 5 days.

Fermented mayo: Just add 1-2 tbsp whey (liquid from yogurt), leave at room temp 8 hours, then refrigerate & enjoy. It WILL thin it some, so make it thicker than you think, before adding the whey.

@SRDas It must just be the stupid North American “food safety” mentality then. That’s cool to know! That combo sounds like it had insane flavour.

    Hey, herb-growing nerds —

My oregano and thyme are the healthiest they have ever been, of late, and all I’ve started doing is giving them a heavy hand-misting of water (just h20) with a spray bottle.

I’ve had problems with tiny green pests in my kitchen since 2021. I saw them coming back, right before I began misting, and I haven’t seen them since.

I usually give them their mist at dinner, and I water in the morning.

    Your mileage may vary.

    (Tarragon, mint, parsley also thriving.)

Lush green English thyme — which has always been dry and hard and browner before now

It has been a lot & stupid week.

    Praise jeebus, it’s Friday.

Being lazy with coffee for a bit longer, a belly full of waffle & banana.

I have been captioning a great documentary, but it’s all about corruption & it leaves me disheartened about the state of power & business today.

I met a woman in 2015 who was very jaded. During dinner at her place, I insisted the world was improving & corruption was improving.

I think of her cynical answers a lot. We’d be on the same page, now.

@cavalierbob @Giliell Monoculture lawns tend to be a poor choices for the environment.

It's not just a lifestyle choice when affects nature too, through the loss of diversity for pollinators, etc, & dumb to say "you can only grow food in the backyard" if someone's front is the only place where they have good growing conditions.

I get that it's "a tradeoff" but there's a difference between saying "you can't store shit there" & "put your boat away" versus "growing veggies out front is bad".
