I am only allowed “soft meat” until week four of my recovery, so I’m going back in time to a neglected budget-friendly masterpiece meal of the 1970s:

The Salisbury Steak.

Meaty, rich, glorious. Won’t break the bank.

Great with potatoes, rice, polenta — and freezes very well too, which I’ll be doing.

My surgeon came in on his day off to check on all the people he saved yesterday, even though we are technically on another surgeon’s docket now.

What a great doctor. I’m so glad I decided to trust him.

He said my surgery was a great way to end his day. Apparently there was a band dangling off my ovary that trapped my bowel in it, one snip, and boop! Done.

So, I had surgery.

All those food issues I’ve increasingly suffered over the last 3-4 years now appear to be the result of a bowel blockage caused by surgical scar tissue that has formed since 2017.

I nearly waited too long to investigate & I am so grateful my surgeon pressured me to let him do surgery.

He operated laparoscopically and WAS DONE IN 45 MINUTES.

I lost 120 pounds trying to solve food-related issues, but if I had not, this quick surgery could not have been possible.

I got out of surgery 15 hours ago and have already walked 1500 steps & will take another stroll around the hospital floor shortly.

I’m on liquids, & if I do well handle it, then I may go home tomorrow.

Folks, if you have been on an ever-increasing list of foods giving you digestive hell & constipating you, read about SIBO.

If you’ve previously had abdominal surgery, it could be scar tissue making your life hell, & NO lifestyle changes will solve it! Investigate.

@snarkysteff The other thing with frequent ailments is if you find yourself having repeated episodes of "food poisoning" have your gallbladder checked out.

Turned out to be a lovely dinner, for someone who’s using groceries up and getting crafty.

Basmati cooked with orange juice, ras el hanout, & turkey stock, topped with hazelnuts, dates, herbs, orange zest, white pepper, & black pepper.

Homegrown greens with tomatoes, accompanied by a harissa-rubbed pork loin chop, & a splash of Greek yogurt.

OMG, cleaning out the fridge & I’ve made an amazing curry-ish soup. It has cinnamon, coriander, cumin, chili powder, turmeric, hot pepper pickle brine, & so many other seasonings.

But I tossed carrots, onion, & celery in bacon fat, salt, & chili powder, then hard roasted ‘em in the air fryer.

Meanwhile, I cooked out my spices with ginger & garlic, then added 2 old apples. Finished with stock & coconut milk, & a bit of coconut aminos (or soy sauce) & lemon juice. It’s magic.

A pot has shrivelled, charred veggies and aromatics — just before covering with stock

Amazing Persian-style stuffed peppers. (Do not do 2 teaspoons of saffron! Just a pinch will do.)

I used Baharat spice blend instead of the combo they list — it’s essentially the same. Either will work.

I also used Michael Solomonov’s method of washing and soaking the rice, rather than cooking it beforehand.

I chose to soak the rice in 2L boiling water and I let it sit for 4 hours. With thicker bell pepper walls, I baked it for 75 minutes & it was perfect. https://jmoreliving.com/2019/02/13/persian-inspired-stuffed-peppers/

@jhv I can’t figure out what the mistake is. 2 pinches? 2 threads? None of those make sense. It’s so odd. A pinch is, what, $2-3? Maybe more? Crazy.

Last night’s meal was a case of eyes bigger than belly, so the smaller of the two pieces of roast pork went into a sandwich tonight.

Lightly taste bread
Avocado
Tomato
Homegrown lettuce
Calabrian chili crunch mayo
Oregano/garlic roasted pork

The bread’s my homemade gluten-free loaf. Perfect quick dinner before a long first-real-spring-night walk.

The best cheat meal I have made in a long, long time.

Pork tenderloin marinated for two days in garlic, oregano and yogurt.

Hand-cut twice-fried shoestring fries. Chive-lemon mayo for dipping. I ran the potatoes through a mandolin for thick slices, then cut them with a knife for fries.

Homegrown lettuce salad.

Misjudged the amount of pork so half is going in a sandwich tomorrow for lunch.

Don’t toss your sprouted old, drying garlic. It’s fine in marinades.

Add as much as you like to yogurt or buttermilk with seasoning or herbs, and blast it in the blender so it purees.

I did that today with a head of old garlic, half a cup Greek yogurt, and a half cup fresh oregano from the garden, and generous salt.

Turned out it was a nice (easy) pork marinade.

My friend was given duck eggs.

My tip was to make duck egg mayonnaise. It’s the same, but the duck yolk emulsifies better so you have to add more oil and make a larger batch.

You CAN make homemade mayonnaise that lasts two weeks, but you must ferment it, otherwise it only last 5 days.

Fermented mayo: Just add 1-2 tbsp whey (liquid from yogurt), leave at room temp 8 hours, then refrigerate & enjoy. It WILL thin it some, so make it thicker than you think, before adding the whey.

@snarkysteff ducks eggs are great for carbonara too,
I'm not sure why you say mayo will spoil in 5 days unless fermented. I've made some (chicken yolks) and sardine can olive oil that has lasted a month. There's enough acid in the mayo that it should be ok.
Regular (commercial) mayo (edited out: i̶n̶ ̶j̶a̶r̶s̶) doen't need to be refrigerated really if contamination is kept out
