Pacific Northwest cuisine. “Cascadia cuisine” A 2024 James Beard best chef nominee at Mäs in Ashland, Oregon shows the strong influence of Japan in their food and the region. Check out the menu (100 day aged broth!) and also the pics at the link. Gorgeous and creative. http://masashland.com/pics/

@FlockOfCats totally. Would love to drive the 4 hours and eat there but spendy. Like US$200+/person and more with drinks spendy. 😬
The Japan influence/ origin part of story is: “On a whim, Dorcak went to Tokyo, where he encountered several nano-restaurants with a handful of seats, one or two chefs executing omakase and tasting menus.”

@mangotable there was a place like that on my block on Monnaka in Tokyo. It probably sat 8 at most. We couldn’t bring ourselves to pay 10,000 yen during lunch or 20,000 yen during dinner for Michelin star tempura lol (though I’m sure it’s amazing)

@FlockOfCats I got to go to 2 nice Michelin places like that in Tokyo for business so I never had to pick up the tab. They taste better when you don’t have to pay bc you’re not stressed about the cost that way. 😂
