To be fair, the original recipe is for 8x a base broth, the idea being that you batch cook it and freeze the rest. I’m making 1x the broth, so it doesn’t need so long, right?
I've got it down to half an hour now for making small amounts - 2 chopped onions, half a grated carrot and half a pepper into a frying pan and then fry on low until softened. Chuck the spices in with just enough oil to stop them burning for the last 10 mins and then blitz. Feels like cheating but works great when I'm short on time after work.
