I grew up in OH, you see and thought that bagels were... baked. And that was because every "bagel" I'd ever eaten was baked ... because that's what the bagel shops thought too.
Finding out about this was like having a hole into a new dimension blown through my world.
@lindsey@futurebird Yeah! It's not that they're terrible... well, they tend to be terrible, but ... okay yeah they're terrible. Even as rolls. I was going to say "it's not that they're terrible, they're just not bagels" but all the ones I had (grad school in Kentucky is why) were in fact also terrible xD

for about 6 months I lived near a place that boiled their bagels in salt water and roasted their coffee beans on site. Place smelled wonderful.
then they went out of business, and someone else bought the name, and the building, and ran a totally different sort of place that didn't do either of those things, but it lasted for about 13 years.
@moira the seeded topped ones on the right look particularly legit. I personally am not a bagel eater, aside from bagel chips, but my husband likes bagels, so I tried baking some, once. Clearly I need to try again. 🙂
