Putting the okonomi in #okonomiyaki by using some Sapporo #beer in the batter
(I like cooking with beer, sometimes I even add it to the food - WCF iirc)

Scallops, a prawn and a rasher of ๐ฅ per person and an egg/2. Made 2 of these so everyone gets half.
Been a while since I #okonomiyaki ed at home so not the best flipp and reflip - but a bit of sauce to glaze, aonori and katsuoboshi easily covers.
(Nearly out of the Kewpie so don't mind the abject squeeze failure)
I got into making okonomiyaki at home after partner and had it in Osaka on a trip in 2016. I've made it regularly enough that kids have grown up with it - and finally had it last year at the same spot*
Anyways, if you want to make okonomiyaki it's pretty easy - get some otafuku brand flour mix - tastes just like the stuff in Osaka (and I've tried grated nagaimo and all that, but don't bother). The sauce, well otafuku is ok but

For okonomiyaki sauce - otafuku is fine but once you taste you'll realize fairly easy to make your own: mostly ketchup, Worcestershire, soy (maybe a small bit of hot sauce for spice and touch of tartness). Hey it's okonomiyaki after all.
(Oh I do like to put the teeny dried ๐ฆ in with the batter, cabbage - skip the tenkasu tempura scraps).
Do what you like!
Adding to this thread on my #Japanese#Okinawa#Rum exploration
Opened this OneRum bottle intending to daiquiri, but the fragrance or lack prompted me to pull out and get nosy. Smells a bit like Indian palm toddy. Uses sugar just from Ie island. Tempted to say Clairin like but no it's more spirit, vodka or sochu like - thin, smooth with a touch of heat (48%) just a late hint it's sugar distillate. Sochu, awamori sensibilities in making it for sure. (Mizuho Distillery)

Ok so I did make that #Daiquiri
2 oz #rum
1 oz fresh squeezed lime juice [wish I had shikuwasa]
ยพ oz rich simple syrup
Oh dear f$expletive deleted me - in a well chilled coupe, took a sip and this is exquisite. Close my eyes and aware of the back of my neck calming.
Didn't expect that. 180โฐ from a more upfront sugary rum.
@Deus Nothing extravagant - the Ie Island Rum was 4400ยฅ (for 500 mL); same store (in Japan) had Old Monk for ~5500 (750 mL). But that's an import there.
The Cor Cor - can't remember but similar, in that range I think.
Friday night #movie - Kill Bill (I)
been meaning to watch this with kids for a while, they're ok for this now I think. (even if they don't have the background in Honk Kong and Japanese Yakuza, samurai 70s flicks)
I havent rewatched in 20 or so yrs. Some scenes and sequences are still immediately familiar. A+ filmmaking for sure (yes, QT turned out to be a jackass), and great soundtrack [that kids are well familiar with]
But total props to kid2, who is a walking compendium of #Kimono info (no idea when she absorbed all that), for pointing out that Lucy Liu's character O-Ren Ishii is wearing a funeral Mofuku kimono
and then later a wedding Shiromuku kimono (but oddly black haneri) which makes amazing sense from the plot/story.
#TIL about a really high quality and expensive #vegetarian meal in #Japan called Shojin Ryori. It's a vegetarian cuisine that's prepared at Buddhist temples and is mostly found in Kyoto. You will need to reserve ahead of time for these. #Vegan#Japanese

A few more from our trip last year - went back to koyasan.
Koya tofu is a special kind of tofu - freeze dried tofu. It soaks up flavors and broth and is super light
@Deus if you are interested in Shojin Ryori or Japanese style cuisine and cooking see if you can get a hold of Victoria Riccardi's
Untangling My Chopsticks: A Culinary Sojourn in Kyoto
There is a chapter/section where she talks about Shojin Ryori
@Deus the mushrooms used to make the broth are usually dried shiitake and that 'dashi' is very gently flavored (kombu is of course used). Otherwise a few other mushrooms used and served directly but nothing out of the ordinary (it's not too amped up in flavor or ostentatious in tastes)
Matsutake mushroom in Fall are good but expensive (and not really in the Shojin Ryori afaik but may be if it's local and from forests)
