I love that I can casually make chawanmushi in the instant pot like it’s NBD (really easy once you’ve done it a few times). It’s one of my favorite things to eat and I hate paying so much money for them at Japanese restaurants

SRDas,
@SRDas@mastodon.online avatar

@skinnylatte can make a (large) single serve one in the microwave in fastest way (Without raw chicken/meat to start). I haven't checked timings for different amounts but that can be easily done (don't have to do that optimization for instant pot).

They've changed some of the routes, so I ended up on the wrong bus and got off downtown at not my usual spot and had to walk a bit to get to the train station. So here you too can enjoy some nice downtown (or dahntahn as they say in) buildings in this lovely blue sky weather

Tonight's is a great cocktail from the prohibition era:

30ml light Cuban rum
30ml cognac
30ml triple sec
10ml lemon juice
A scant barspoon of simple sirup
3 drops of saline solution

Shake&Strain in a chilled coupe and garnish with a lemon twist.

I love brandy cocktails, and I love rum, so this one is one of the best I've ever made myself.

LA food diary.

Some of you know I’m a big fan of LA food. I think that dollar for dollar you get a tremendous amount of cuisines, varieties of foods, in this melting pot which feels to me like it has far more immigrant and working class food than the Bay Area. Even the density and quality of ‘fancy food’ is high!

I’m keeping a record of my LA 2024 discoveries.

SRDas,
@SRDas@mastodon.online avatar

@skinnylatte regardless of what's on the menu - I always ask Thai places if they have som tam poo (with the raw/salted crab). If they have it great! If not I hope it gets them to think it would sell...
(I daresay I've gotten really good and spicy papaya salads even without the crab, I like to think it's perhaps because I ventured to ask about the crab)

SRDas,
@SRDas@mastodon.online avatar

@skinnylatte oh among the most amazing Thai meals I had was in LA. Took a friend I was staying with to Jitlada (a while back, not sure if it's still around). They had a sour fish curry - I think with fermented fish guts. Super spicy - was well beyond our tolerances. We couldn't stop eating. My friend still curses me lovingly

TatianaIlyina, to academia
@TatianaIlyina@mas.to avatar

Just learned that a very promising early career scientist in my discipline has left academia, not seeing a desired career future for herself here. That company is lucky to get her. Yet, it saddens me enormously that it is often the most dynamic, brilliant, curious once, who are challenging status quo, committed to diversity and making our world a better place, who are leaving .

What are we doing wrong to make academic careers so unattractive for the best young minds?

SRDas,
@SRDas@mastodon.online avatar

@TatianaIlyina the system is broken.
the days of academics running universities (and rotating out) are gone. Universities are mostly hedge funds with some academic divisions (and/or athletics) for revenue. And that's not even going into the related publishing industry.
It is working ok for whom the system was designed for perhaps. But that demographic has changed

My student (8 years old) is thinking of “bad ideas that sound good” (we’re working on ideas for that and “good ideas that sound bad” (controlled burns for forest fires).

What other ideas do you all have?

SRDas,
@SRDas@mastodon.online avatar

@Bronwyn @finn sharp knives you apply less pressure. But good technique is needed.
Along those lines - (better to) teach how to use knives , and light fires (to kids) earlier. Curious what your 8yo may think of that...

So, I had surgery.

All those food issues I’ve increasingly suffered over the last 3-4 years now appear to be the result of a bowel blockage caused by surgical scar tissue that has formed since 2017.

I nearly waited too long to investigate & I am so grateful my surgeon pressured me to let him do surgery.

He operated laparoscopically and WAS DONE IN 45 MINUTES.

I lost 120 pounds trying to solve food-related issues, but if I had not, this quick surgery could not have been possible.

@wa7iut with knives (and fire), better to teach earlier. Less risky that way imo.

Tried to pass on to kids what I wish I had learned much earlier. Kids could wield knives before 10. Here's kid2 7 yrs ago pic tells me ! Needed a stool then.

SRDas,

hopefully it'll serve the kids well. They'll need to find the time to cook, but for now they are quite happy (preferring really) to eat whatever we cook rather than from out

I don't talk about the /work stuff I'm doing, just sheepish really (even if it is pretty cool). But here's a nice article that previews the @CarnegieMellon Cloud Lab that will soon go online here in with oversight by the Emerald Cloud Lab. I'm quoted a bit but I like this article mainly because I got the query from a student & it's in the student run paper: the Tartan.
