Rum maturation: who's doing it differently?

This could be what goes into the cask, something about the cask itself, perhaps even something about where/how the cask is kept as the rum matures.

It really is funny how tastes evolve.

I used to be big into but these days I trend more toward

I used to be big into but I have really gone off recently as I've gone down my journey.

There was a time I used to think I could get into / but have gone off that too.

I used to be about mixed spirits but now I primarily look out for spirits I can sip neat.

Maybe its to do with getting older but my palate for different things really has evolved.

Today in Labor History January 26, 1808: Soldiers took over New South Wales, Australia, during the Rum Rebellion. It was Australia’s only military coup. At the time, NSW was a British penal colony. William Bligh was governor of the territory. This was the same William Bligh who was an officer under Captain Cook when he attempted to kidnap the King of Hawai’i. He was also the same William Bligh who was overthrown in the Mutiny on the Bounty, in 1789. It is questionable why the British thought he’d do better in charge of a bunch of prisoners and unruly soldiers, than he did with a bunch of sailors. Perhaps they were just desperate. One of Bligh’s commissions was to reign in the Rum Corps, which held a monopoly on the illegal rum trade in Australia. They also controlled the sale of other commodities. Bligh started to enforce penalties for the illegal sale and importation of liquor. He also tried to provide relief to farmers, suffering from recent flooding and price-gouging by the Rum Corps, by providing provisions from the colony’s stores. The monopolists didn’t like his looting of the stores, from which they were profiting handsomely, nor his enforcement of the liquor laws. So, they arrested him and deported him to Hobart, Van Diemen’s Land. The military remained in control of NSW until 1810.

I checked on dict.cc if 'grog' (in a drink made of hot water and rum) is known in speaking countries.

It didn't come up with a British word/explanation, but with an one: 'drink made with water or 'Small Beer' (a weak beer) and rum'.

Is diluted with hot water really not drunk in Britain (something I can hardly believe)?

And how does made with beer taste (which I find hard to imagine and don't want to try until I' ve been assured that it is palatable)?

Don’t know that I’ve ever had a proper (traditional) daiquiri. How have I missed out on this deliciousness for so long?!?!

James,
@James@woof.group avatar

@seismic007 if I am introducing someone to #rum as a base spirit and not just "that thing you mix with coke at the bar" or "spiced rum", a traditional #daiquiri is what I go to. Rum, lime, simple. Perfection.

It's also a great way to test different rums and get a sense of their unique flavors and how they might work in a more complex cocktail.

Try a daiquiri made with some funkier rums, like Smith and Cross! Or with a nice smooth rum like a Diplomatico Reserva Exclusiva 😍

Wow. The recipe that won Punch’s blind Eggnog tasting uses a split base of rum, cognac, and bourbon. I’ve done that for many years, more surprisingly though the recipe calls for PF 1840 and Old Grand Dad. I’ve been using Bonded Old Grand Dad, PF 1840, and OFTD for several years now. I also use a mix of whole milk and heavy cream. My recipe has minor differences, and I don’t pre batch, but otherwise they’re very similar.
