To give you an idea of the Asian American anger at David Chang for being an asshole who wanted to enforce trademarks on ‘chilli crunch’, I was at my friend’s home in LA looking at his Asian cookbooks when he said, ‘you wanna see some garbage?’ Then he pulled out the Momofuku cookbook and we both laughed and laughed

@skinnylatte do you have any cookbook recommendations of any Asian styles? Sorry to say I have Momofuku hah/boohoo from when I used to like him.

I’m into books and cooking with detailed—even long—processes for complete results. I’m interested in the Rintaro book but also want more by actual Asian cooks.

@zackstern for Japanese I think you’d get further with Just One Cookbook online. I don’t think it’s worth trying to replicate Rintaro if you won’t be building a wood or bincho grill

@zackstern haha I liked that and did that for a while but frankly just want to go to a good restaurant for it now. It takes so much practice to do well. Yakitori Toriman in Santa Cruz is my fave, ex Rintaro chefs decamped there and do their own thing. If you check IG, sometimes they go to Berkeley too

@zackstern @skinnylatte just one cookbook is great. Nami, who runs the site, is really sweet. I took a shokupan baking class with her on zoom a few years ago.
Never had a joc recipe fail. Often she includes suggestions for more easily accessible ingredients if you don't have a good Asian grocery nearby.
