Depends on the category.

Action/Adventure - Jedi Fallen Order. I know there is some fatigue in the community around jedi-focused stories, but this was the first sw game in a while that really struck a chord with me. The challenge of the combat and the unique environments really made it stand out for me.

All around - Episode I racer. First game I ever owned on N64, and I replay it basically once a year.

Racer is one of those games I used to have so much nostalgia for, for a long while it was in my mind of the best games ever made. I played it again recently and it's funny how different it is from my memories as a kid, but still pretty fun!

At 6 years old it took me weeks, maybe months to beat it. At 26 I could beat it in an afternoon haha

Original Knights of the Old Republic easily takes the first place for me. Fallen Order and Academy comes 2nd and 3rd.

Ahh what I wouldn't give for another Obsidian SW RPG.

Tie Fighter, XvT and X-Wing Alliance are some of the greatest space sims to ever grace a computer.
Dark Forces brought FPS to Star Wars! Jedi Outcast was a transcendent experience when it came out - the dismemberment! The lightsaber trails!
KOTOR is an absolutely classic Star Wars story in the same style as the OT, and KOTOR2 is a fantastic deconstruction of classic Star Wars, both with well written and memorable characters.
OG Battlefront and Battlefront 2 brought us some awesome squad shooter goodness!
Jedi Outcast and Survivor giving us some awesome modern Star Wars.

Rogue Squadron, Empire At War, Republic Commando, Episode 1 Racer, even the two MMOs Star Wars Galaxies and SWTOR, all solid games. There's no way I could pick just one.

    @inkican Some brutal level design in places as well. Game had lasting personality in that regard. The vertigo stays with me. Did a hell of a lot with not very much.

    Star Wars The Old Republic. Basically KOTOR with mmo elements. You could play it as a single player game if you wanted, with a lot of story content.
    But doing flash points and PvP with my friends was fun too. Buying strongholds and flagships then decorating them was fun as well.

    I haven't played that many and thus can't give a definitive answer, but SWTOR (The Old Republic MMO) is extremely good. Despite being an MMO, it has fantastic single player gameplay and stories. The Knights of the Fallen Empire and Eternal Throne DLCs are peak gaming. Mass Effect quality stuff.

    Also, the original X-Wing was one of my favorite games of all time. I didn't like TIE Fighter as much because the Rebel ships were a bit too bullet-spongey. I preferred shooting the hard-to-hit but easy-to-kill TIE Fighters.

    Never got around to playing the later sequels but maybe I should go back to them on GOG?

    The graphical and handling upgrades in X-Wing vs TIE Fighter put it a cut above either X-Wing or TIE Fighter, though the missions end up feeling a bit more linear and focused (one of my favourite things to do in X-Wing was ignore the mission brief and attack the Star Destroyers).

    I have no idea where the series goes after that, though. The next Star Wars starfighter game I played would have been Rogue Squadron, which was a rails shooter. I didn't for that at all, so I totally disengaged from that aspect of the franchise.

    Dark Forces was one of the first FPSes to have true 3D not 2.5D. I remember specifically one mission where you had to climb on top of an elevator, and that felt awesome. Plus the way your blaster beams would bounce around the room!

    Knights of the old republic 1 and 2. HK-47 is the best character in all starwars and if you don't agree you are a meatbag! Relevant HK-47 quote "Warning: It is dangerous to be right when the government is wrong."

    The one I never got to play, Star Wars: 1313. I had completely blocked this game from my mind until I read Blood, Sweat, and Pixels recently and all the memories came flooding back. Third-person action shooter, with cool traversal mechanics, dark seedy underbelly of the universe, focused on an unnamed bounty hunter (before Lucas stepped in and tried to make it about a younger Boba)...it would have been so freaking good.

    Star Wars: Rebellion.

    Very few people have probably heard about it, and it wasn’t the best made fame ever but I really liked it. It was kind of like a 4x, where you would recruit/takeover different systems/planets and try to defeat the opposing faction. It had unique characters that could add to your efficiency and spies who could steal technology or sabotage. If you played empire you could even build the Death Star and blow up planets. It was a lot of fun when I was just getting into PC gaming.

    Honorable mention: Ep1 Racer and Rogue Squadron.
