Went out to Pherm Brewing in Gambrills, MD earlier today. They had a new Mango Habanero IPA out, and I wanted to try out the Pho Wheels food truck too.
I had a few small pours, and a full pour of the Caspian (mango habanero IPA that I wish had a bit more heat) and their Forbin (American IPA).
Pho Wheels was down right fantastic. I got their Banh Mirria (Banh Mi and Birria fusion), and their tacos with a fried egg on each.
@Zarf joined me on the latter half of the visit. Great times.
Rolling everything up. When we don't have #RicePaper - we just use lettuce as the wrapper. In Vietnam, it's usually eaten with just lettuce wraps. I prefer wrapping everything into rice paper.

For our brunch today. Only 1 is left. I gobbled up 2 of them, pretty quickly. It's one of Dad's fave dishes & every time I make & eat it now, it reminds me of when we ate them together. I miss mealtimes with my Dad a lot.
Beloved Partner is out of town, so I'm slow-cooking a big pot of Bó Kho, the spicy Vietnamese beef stew, as one does. New to this dish, so I'll let y'all know how it turns out.
Mercy me. Bó Kho is one of my new favorite things. Stew beef (or brisket) marinated in fish sauce, garlic, ginger, Chinese 5-spice, and brown sugar then stewed in broth, soy sauce, sautéed onion, garlic, lemongrass, carrots, various red pepper powders, and chili oil. We had Vietnamese style bun rieu ; crab/seafood tomato soup. Mom used some frozen soft shell crabs, this time, because we don't have any dungeness right now.
Internationally, no #Vietnamese dish has a higher profile than Phở. However, most incorrectly assume that the word "Phở" directly refers to a broth-based dish when it is, in fact, a reference to "bánh phở", the noodle present in that renowned soup. There are actually many forms of phở that have no broth at all...such as the one pictured here from Hà Giang: Phở chua ("sour phở"). One of #Vietnam's most popular dishes, Mì Quảng. This was originally a wheat noodle dish brought to the port of Faifo (now Hội An) by Chinese merchants. It was adapted to #Vietnamese tastes by switching to rice noodles (though they're often stained yellow using tumeric to keep them looking the same. They can be topped with any number of meat, seafood, and herbs, making them very flexible. This one has far more broth than most. They typically seem more dressed than brothed. #vietnamesefood
