I had some leftover ricotta cheesecake filling mix from the other day, and half a dozen tinned apricot halves in the fridge, and since we were in need of a little dessert, I made this.

It's a shortbread base, topped with a layer of cheesecake, and then drizzled with puréed apricot, and baked for approx 15 mins (shortbread was baked for 10 mins prior to topping).

It was, as, expected, delicious (and I have more for later).

Also, I totally winged it, so the above /is/ the recipe. (i.e. there were no measurements whatsoever).

Points for trying, but websites that automatically convert US measurements in recipes to metric are hilarious.

US: 1 Tablespoon of oil

ugh. I knew this would happen.
For reasons, we still have an adsl connection, for different reasons we've had to migrate it to Telstra, who apparently do everything in their power to make you use one of their pre-configured modems.
I, on the other hand, have an existing managed service that includes sub-1sec failover from Starlink -> ADSL -> LTE in that order and there is no room for said modem in that configuration.
My previous adsl provider provided me with an account and password to login to the DSL service and it was painless to setup.
Telstra on the other hand, have not provided me with the account password for the PPPoE/PPPoA connection on the modem, and now it looks like I'm going to have to actually call someone to sort this out :(
(that's a tomorrow, business hours problem, but still one I'd have preferred to sort out online).

Update: called the Telstra business support line I was given. Dealt with an automated chat bot, eventually put through to another phone queue, waited on hold for an eon, got a support person who supplied me with the required details within 45 secs.

Great, not only did I not get lunch until 14:15 on the first day I'm holding the fort alone at work, but now I'm flooded out from home (i.e. the bridges I need to cross to get home are flooded and impassable).

Hopefully the waters recede before I get there (I don't leave work for another 45mins, then an hour-ish drive to home).

    I made more experimental biscuits.

    Strawberry Gum Biscuits

    Ingredients

    • 100g unsalted butter
    • 150g castor sugar
    • 125g flour
    • 1 teaspoon baking powder
    • 100g almond meal
    • 25g maple syrup
    • 1 teaspoon Strawberry Gum powder[1]

    Method

    Cream the butter and sugar.
    Add the strawberry gum and beat.

    Fold in the remaining ingredients.

    Pipe into biscuits shapes, bake at 175ºC (fan forced) for 9min 30 secs.

    Optionally sprinkle with icing sugar before they cool.

    Trying to repair this Logitech game controller which has a broken wire right at where it goes in to the body. The holder for the wire in the body is a moulded plastic piece, so it looks like I’m going to have to desolder from the circuit board, pull the cable through, trim the broken bit, restrip and rethread the cable and resolver it to the board.

    My soldering foo is weak. I rate my chances of not screwing this up as maybe 25%

    After the moulded plastic piece it is wrapped around a small toroid and then soldered to the underside of the board.
    Conveniently two black wires. :-(

    We ran out of our favourite sweet chilli sauce last night (It's from The Happy Pug, in Mareeba, far north Qld).

    Anyway, it seemed silly to order more from the other end of the state, so I made some.

    Here are two potentially dangerous* bottles of Sweet Chilli and Ginger sauce.

    • I didn't have cayenne chillies, so I used my frozen stash of home grown chillies, mostly habanero but a couple of ghosts, so while it is indeed sweet, it also packs a punch.

    The vinegar used is also home made apple cider vinegar, aged for must be 6 years by now.
