I was going to buy some olive oil today, but all the bottles at the grocery store had gunk in them. Apparently, this can either mean it's bad, or that it's been stored cold. I found a Reddit thread that said you should just wrap it in a warm towel and it'll fix that. I'm also getting contradictory information about the oil's ability to withstand heat. The only oil that said on the bottle that it could withstand high heat was a 80-20 blend of canola oil and olive oil. But the Internet says that pure olive oil can withstand high heat too. Who to trust?

@thor It makes me want to experiment with it. A/B two oil samples, one heated to the smoke point, one not. The oil is allowed to cool, and then the flavor compared by dipping bread in it.

I've heated olive oil to the smoke point before and it hasn't ruined any dishes I've made.

My intuition is that heating it above the smoke point may destroy some of the more delicate olive flavors, and at that rate you'd be better off using something cheaper.

@thor Butter is just too much for a lot of things, and it will burn. I've been using oil more lately too. I've also found things like bread get a bit crispier in oil vs cooking in butter.

@thor Fairly regularly, although I'd characterize it more as toasting than burning. I'm into browned butter, but it changes the flavor of whatever you're cooking in it rather dramatically. Often a good thing, but sometimes not. A lot of Indian dishes would taste a lot different if they used butter instead of ghee. Ghee is butter with the milk solids removed, which is what turns butter brown when you heat it.

Posting from maxx again, it may become my daily driver on this laptop. It's clunky, but it's space efficient. You just build your own ui based on what's convenient at the moment. You can move everything.

@thor More than a skin. Think of it as an alternative to Gnome or KDE, although not nearly as feature rich.

@thor Poorly. The overall user experience is analogous to a slightly better Windows 3.1, or a slightly worse version of whatever a Macintosh SE ran. Fun to play with though, and it screams on modern hardware.

Oh man, my sourdough starter actually appears to have worked. I've been setting aside previous dough (mother dough) from the first batch I did, which was using commercial yeast.

This is now a third generation of dough, and I lobbed it in with a 50/50 mix of bread flour and all wheat, and I had a successful rise, and a proper sourdough smell.

@ai6yr @vcso_patrol_log New years eve police scanner traffic is always great. So far, I've heard someone was trying trespassing at a scrapyard (they sent like 10 cops for that one), a trespass at a Taco Bell, and someone being disorderly at a Wal Mart.

There was also a commercial burglary that made a bit of a fuss, but it turned out it was the janitors.

I've got another doctors appointment . This time it's my orthopedic surgeon. If he tells me that everything is fine and that I don't need to see him for a few months I'll probably see about switching to a new surgeon. It's not that he isn't any good, it's his office staff. Probably some of the most incompetent people I've ever seen work in a doctors office. I got the distinct feeling from him last time that he was aware and that he had no control over hiring and firing.
