I really need to figure out how to make one-person cheesecake. I can’t eat a whole one and convince myself I’m eating healthy. Yes, I can do math, but still.
OK. I’m keeping this recipe mistake in most, if not all of my cheesecakes. Reaplace sour cream and heavy cream with yogurt. This coffee/espresso cheesecake is a lot softer and lighter than standard cheesecake. Reminds me of pudding, but not as liquid. Yum.
Made this wonderful vegan cheesecake for my wife's birthday and it came out amazing! WFPB and Vegan, it's still so rich and chocolatey and just...delicious. Highly recommend!
