Good morning from the east side of Kauai, where it's 7am and someone has constructed a jungle Stargate. See you in the other side.

I was shocked to find it was six months since I last put a bit of money towards keeping mastodon.scot chugging away...

So I've put that right!

On Saturday we visit one of our local bakeries and pick up a bag of leftover bread and cakes.
This week we got our from the local co-op. All this for 19 kr (about 2.5 Euros)!

Too good to go has become a Danish institution. Reduce food waste, pick up some goodies, good for the planet, maybe not so good for my waistline!

As the story goes, the had enough oil to last just one night, but somehow, someway, it lasted for eight."

All the old family papers have funneled down to me now & there are occasional rewards for the work. For example, my great-great-grandmother's recipe for doughnuts.

"Best Doughnuts
by Mrs. J. Bennett

This recipe gave me the finest 'nuts' I ever ate; without the greasy taste that is so characteristic of this cake, as usually made.

1 cup sugar
1 cup sweet milk
3 eggs
3 level tsps baking powder
nutmeg and salt to taste
flour to make a soft dough

It’s the weekend and I got a bunch of heirloom apples in my fruit CSA so hello apple fritters! I doubled down on vegan-ness and on the apples by replacing the eggs with applesauce, made with a different heirloom apple from the CSA.

Three fritters in a wok, floating in fry oil. They’re surrounded by bubbles and are starting to become crisp.
A fritter, deep brown and glazed, on a plate.
My hand holds open a fritter broken in half, revealing an open, bready crumb and a ton of apple chunks.

Thanks to @chad I found out it's International Doughnut/Donut Day! Good thing I travelled down Waterloo Region's (unofficial) Doughnut Trail a couple of weeks ago to find some awesome independent doughnutteries.
