I haven’t given up on sourdough, there’s another levain coming along for that as I post, dear reader. Meanwhile, preferments for Focaccia-Palooza are on deck. Yesterday’s biga is about sixteen hours old, but they’re the same formula: 250g each of water and bread flour, 3g Red Star. So much fermentation around here.

A whole-food non-animal broccoli-cheese soup.

I saw a broccoli-cheese soup in the deli and I started thinking about it, and I worked out a recipe idea that fits my whole-food non-animal diet.

I've not yet made it, and I'll post when I do, but I thought my thoughts on making the recipe might be of interest.

Oat milk is an excellent idea! Somehow that didn't occur to me. I'll skip the veggie broth and use oat milk instead.

I like the miso paste idea, but I think the mushrooms will provide ample umami in this soup.

"Homegrown herbs" makes me think of the green shiso and red shiso I've been cultivating in an indoor planter. I'll use some of that.

Castagnaccio Is a traditional Tuscan dessert made with chestnut flour pine seeds, raisins, water, and... no sugar!

My aunt's version also has rosemary. It's 100% 😋

English translation courtesy of :

Chestnut flour 300g. A pinch of salt. About 700ml cold water.

Grease a round or rectangular pan with olive oil (30cm diameter). Pour in the quite liquid mix, add pine nuts and raisins, drizzle with a bit of oil (not too much).

Bake at 180°C for 50 mins. Should form a slight crust on top. Best served warm.

MAKES ABOUT 5 CUPS

Ingredients
1 cup whole grains ( preferably rye for cheese or brown rice, or wheat or Kamut berries, or a combination)
6 cups filtered water

Red lentil pizza crust.

This looks easy and apparently is really good for diabetics! (Just add healthy toppings, skip the cheese or use a dairy free version. You can make your own using the recipe linked in the crust recipe).
