When my get too ripe - I fry them up in coconut oil & eat with vanilla ice cream. I make fried bananas in a few different ways. This is the easiest/fastest version.

Asher also got his first few licks of ice cream today - he doesn't get much human foods at all(not good for his cat belly).

4 pieces of banana in frying pan, with coconut oil. Tops are nicely browned.
4 pieces of fried bananas with 2 scoops of vanilla ice cream, on a plate.

@sashin It's better with crushed salted peanuts sprinkled atop but I ran out of salted peanuts so just had super simple version today.

@sashin I don't add extra honey or put any powdered sugar atop like many online fried banana recipes include. I find them hella sweet, on their own, after fried in coconut oil.

The crushed salted peanuts add some extra interesting flavours contrast between sweet & tiny bit of salty. I always add it, if I have any around.
