@woodpunk my favourite would be Red Dead Redemption 2.
For the main story, you can't get around some shooting, but you can ignore that and mostly just wander around in the beautiful landscape.
You might want to do some fishing or hunting to make money if you like.
@eclectech@woodpunk Bookmarking too, because I really don't remember any open world that I've played without combat or collecting stuff. Maybe walking simulators or racing games?
