What cooking direction shook you to the very core with how bloody good it is, and you’ve done it that way ever since?

For me, it was discovering that traditional bolognese ragu uses celery, carrot, and milk, and has no garlic.

Milk. In a bolognese.

Mogwai - Richie Sacramento

This track is Mogwai’s magnum opus, as far as I’m concerned. It’s an absolute masterpiece that was worth the cost of the album alone. As a lucky happenstance though, the rest of the album is also wonderful.

Looks like I am having a day of inspecting musical sacred cows that I have previously bounced off. Got about halfway through Zen Arcade and while it was fine, I wasn't loving it (fwiw I love Copper Blue by Sugar). Now I am trying on Leaves Turn Inside You to see if I can finish it for the first time at least

@jake4480 I just remember being a punk/metal/grunge kid in the early 90s sneering at my out -of-touch uncle for loving Dire Straits. Now I listen to Sultans of Swing and think damn, what a perfect song 😆 and yeah, Mark is just an incredible guitar player, fingerstyle on electric too! I've been getting into their first few albums before they went supernova with Brothers in Arms, some wonderful songwriting and playing over those records.

Got the christmas ‘91 episode of playing while I’m working. Do The Bartman just came on, which whipped me straight back to being 11 and thinking it was the best song ever recorded.

Nostalgia is a hell of a thing.

@DJDarren I still have the bloody 12" of Do The Bartman! It came with a free t-shirt that I wore until it fell apart and was tiny on me. I actually had an argument with a wasted girl at a 6am after party in Ibiza in 1997 when I was wearing it about whether it was appropriate attire. I still maintain that I was in the right. I will die on that hill.

Here it is, my top 20 albums of 2023. It's not ALL metal, although there's a lot of metal. I know not everyone likes metal (or brutal death metal) - but there's some rap, some punk, a little post punk- actually, my top 3 here are all non-metal.

@jake4480 hah it’s not that’s it’s too much, it’s just not a particular flavour of extremity I enjoy. I love grindcore and powerviolence for example, or shit like Teitanblood, but I just can’t get on with slams and gurgling or pig squeals lol. It’s great when you discover loads of new bands, it’s like being a kid on Xmas!

Act of Impalement is your #4 and I give it an impressive "light 8". It has an enjoyably high riff density and I dug it despite my current, hopefully temporary, general metal antipathy. It's the equivalent of a tasty, satisfying burger but metal🤘

@jake4480 i do like Stereogum to be fair. It's the best allround music site out there imho. They cover indie rock very well, and metal and hXc / punk pretty well. They are just ok for hip-hop and they have a blindspot for the more hardcore dance music (but so does everyone).

@jake4480 Personally I do like/love quite a few records off that list: Wednesday, Ratboys, Indigo de Souza, Slow Pulp, Bully, boygenius, Mitski, Midwife - most of which is "bubblegrunge" (lol, puke) but Drain, Tomb Mold, Militarie Gun and Panopticon are all good "heavy" records.
