Chicken Caesar salad pro-tip: brine the chicken in lemon juice and salt, about 4-6 hours, then pepper it well, oil both sides, and grill.

If you’re making your own dressing (…you are making your own dressing, yeah?) you already have fresh-squeezed lemon juice from that, so make the dressing earlier in the day and brine the chicken in the excess lemon juice. The dressing is better with some melding time in the fridge anyway

If you pull this off correctly, the chicken ends up with this lovely smokey/lemon tone, which pairs beautifully with the garlic bite in the dressing.

One of these days I’m gonna FAFO with some fish sauce in the dressing, figure out the right amount to replace the classic anchovy ingredient.

@enobacon thanks, but I don’t have a smoker. I do a hot/less hot two-zone hardwood charcoal fire in a Weber kettle and then reverse sear — and my wife isn’t a fan of super smokey food, so it works out. 😁

Drive back from Seattle took 4 hours, 49 minutes — car says average speed 45mph. (I can't say I didn't stop because the traffic was ass but I can say I didn't get back out of the car after I started.)

Good to be home but apparently it's summer now and I'm moist and I hate it.

    Office re-organization complete! Really wish I’d remembered to take “before” pictures, but:

    Looking to the right from the desks, we have file cabinet, book cases, and miscellaneous storage.
    In the corner opposite the desks, there’s a little book for reading, gaming, napping, etc.
    Looking back at the entry door, more storage, water cooler

    I'm currently in the middle of completely re-arranging my office and my biggest takeaway is HOLY CRAP i need to have, like, an annual event where i move stuff away from the walls and clean it because 7-ish years worth of dust is A LOT.

    I know this is really obvious to most of us but as someone who witnessed the rampant racism, sexism, anti-gayness etc of even the 80s and 90s, it’s pretty clear that the current culture war is just a response to us emerging from those patterns! watch any movie from 1990 or around there and it will blow your mind what was common & totally acceptable. We are waking up from a very deep sleep, and some folks can’t handle it
