Probably about 20 years ago in Dublin my then boyfriend and I made Puerco Pibil from the Robert Rodriguez movie “Once upon a time in Mexico” and never got around to making it again as you need some special ingredients (banana leaves, annato seeds, habañero chillies) that were hard to come by where we were living after we moved away from Ireland. The other day my now husband and I watched the movie with our son and decided it was time to eat this dish again. I did the shopping and my husband cooked. This turned out so well, it was well worth all the planning and effort. The meat had turned so soft! And the spices were absolutely mouth watering. 🤤

This is really simple to cook but you need time. The recipe comes from this video where Robert Rodriguez himself explains what to do:

The enchiladas turned out pretty good!

Recipe I used called for beer in the chicken braise... I think I won't be doing that again.

I think I want more tomatillos next time.

Heat level was perfect. These days I want flavor, not spicy/heat.

Need to write up the amounts and steps cuz using multiple recipes this time was... Too Much Work.

On request, I made some fresh pico de gallo for my daughter for her birthday dinner. She won’t allow me to share photos of her because teenagers, so here’s a photo of my pico instead.

The wife and I decided to check out a new to us Mexican restaurant called XCaret here in Winston Salem today.

Food was really good. Afterwards, we went to Bitty & Beau's for some iced coffee. The company has a really great story as to who they are.

Now, it's time to get comfy at home and just rest and relax until after Christmas.

I love Mexican food (or rather, our local interpretation of it) but between the tortillas, the beans, and the rice it is off-limits.

Today went to Qdoba - a fast-food Mexican place - and I was able to get the vibe without the carbs.

I ordered a bowl - no shell - with the seasoned ground beef, lettuce, tomato salsa, cheese, sour cream, and guac. Then I splurged on some corn salsa*. That was very filling and darned good!

(Tonight I had a leg quarter.)

It can be done, friends!

  • My daily carb limit is 50g total. More or less. What kind of carbs those are (as well as maintaining my IF/eating window) is most important in controlling my inflammation and pain levels - I don't eat for weight loss.

Had dinner at a Mexican restaurant in San Dimas this evening. On the wall next to our table was a poster of the front page of The San Francisco Chronicle from April 1916.

Far below the fold and the sordid tales of Pancho Villa’s battles, this article had the table in stitches. It is best read out loud for maximum effect.

The writing in today’s papers can’t hold a candle to this fantastical reporting!

I don't really bother with or when I can avoid it along with other fast food. There's an amazing that just is cheaper and SO MUCH BETTER than Chipotle. And they also have Lengua! I love cow tongue!

Here is the result of a Friday night panic cook! I looked in the fridge and realized there was a lot of vegetables near turning point. I had this Smoky Black Bean and Quinoa soup recipe stuck to the cupboard door. It’s more of a fall recipe I think, but it tastes great and all my veg worked with it! I also got to try a new type of squash!
