Do you know Canadian-Finnish #pancakes? They're a variant that emerged in the large Finnish population in Northwestern Ontario. Most famously they were the big deal at the historic #Hoito restaurant in #ThunderBay.
I've had them there and they were indeed tasty. (I'm originally from up there and half Finn myself). Even the food journalists from NYTimes and Bon Appetit have written about this delicacy.
I have some wonderful Canadian neighbors here in Seattle and we're planning a joint Canada Day/July Fourth grill-out on Tuesday. But they said their Canada Day food tradition is "pancakes and light beer." Apparently patriotic pancakes are a thing for Canada Day: https://www.foodnetwork.ca/recipe/canada-day-pancakes/
I made these pancakes this morning with lactose-free whole milk and margerine, plus I added chocolate chips, and I have to say, they were the best pancakes I've ever had in my life.
I read Gravity’s Rainbow in the year 2000 and the only thing I really remember about it is how good the banana pancakes sound in that one scene. Thank you for hipping me to what is truly the best pancake variety, Mr. Pynchon. #literature#pancakes

@AbandonedAmerica I take the point. But, in defence of #waffles, they have different characteristics that make them a good alternative. Cooked freshly, they are very crisp. This makes a great base for #Norwegian#Brunost (brown cheese), local jam, and whipped cream. The texture and taste is sublime. #Pancakes vs #Waffles? The obvious answer is both, but probably NOT at the same time. But don't be a hater!
