If it's the breading, you could improve crispness by using corn starch in the mix, or double or even triple frying techniques.

You could even go all out and make a lumpy batter by putting a bit of liquid into the flour and making the lumps stick to the chicken.

Could be that your oven runs hotter than the recipe's so the inside didn't have time to cook through.

Try adjusting to use a slightly lower temp and longer cook time. :flareonpopcat:
