I grew up in a family of cooks, including an uncle who ran a popular restaurant for taxi drivers. The height of his flame that he used to cook every dish was, let’s just say, usually taller than his head.

Most western kitchens including restaurants simply don’t have the raw power to do that type of wok hei. Therefore I find that most Chinese food in the US feels ‘weird’. No breath of the wok, no real fried rice. At home I pump up my stove, and a blow torch on top. Close, but not the same.

@skinnylatte well accidents from flambe cooking at quite rare. It's the deep fried cooking that probably causes more issues.

I love Northeastern Thai (Isaan) and Lao food, and one of the ways you can make everything taste like it’s from there is to use some combination of toasted sticky rice powder with fish sauce, sugar, limes, bird eye red chillies.

Toast sticky (glutinous white) rice without oil in a pan for about 10 min. Grind finely in a mortar and pestle.

You can even add it on steak and fish, preferably with some of the things above

@vowe except technically Mastodon is getting its disclosure wrong.
If someone makes a post containing their exercise schedule that is health and fitness data, then technically Mastodon processes that data.

Electric Razor People: ah they're not that bad once your face gets used to them, the new ones are WAY better than they used to be

Me just now: I've never used the actual-shaving attachment of my sideburn trimmers, I wonder if they've gotten any better in the thirty-odd years I've been occasionally trying them, let's give this one a quick go, yup it's shite

I know this post is unlikely to reach any young lads who're still figuring out the shaving thing, but for the fresh new trans blokes who might see it, electric razors are one of those inventions that people keep saying are Way Better These Days, and twenty years from now someone will tell you "Ah, you should give the new ones a try, they're WAY better than those old ones you used to get," and when they tell you that just give them a second, let the pause extend outwards until they go "once your face gets used to them like"

    A fediverse feature that'd be way better than pinned toots: go to my profile and find a sidebar with a hierarchical menu of plain ol' HTML pages that are stored on my home instance, this is where I put the actually Good Stuff.

    Easy Little Federated Websites, call it, ELFWS, think of Legolas surfing, easy to remember.

    Add a button on every toot that takes you to that user's web pages. Label it "Good Stuff" so we can acknowledge that most of what I post and boost is shite

    Local mum's group got some endorsements for school board they want folk to know about, they needed flyers printed out 2 to a page. LOTS of them. TONIGHT!

    My paper cutter can do maybe 4 sheets at a time, that's gonna take forever.

    Obviously we can't cut just one sheet of paper on a table saw, it'd mangle and obliterate it.

    The oven cleaning man is here. Arrived nicely on time. Desperately firm handshake... but OK.

    He's talking to himself infrequently, which I guess I shouldn't judge... we all have our oddities.

    Industrious sounds of cleaning are happening. We are 90 minutes into the process. I didn't ask how long it might take. Not worried about that, but I hope he's being paid enough for his efforts.
