It is really time for an update.
This morning, Feb 8, it was -7° after a night of snowfall. The weather since New Year’s Eve has so far been a jojo between extreme cold and full storm to severe thaw and now cold and snow again. I’ve been busy moving food kept outside in and out of freezers. Stupidly enough I decided that -15° was perfect for sorting my basement freezer, whereupon the temperature immediately rose 24° within hours …
So far I’ve spread salt and fed the birds

What to do with ? Cranberry, Dried Fruit, and Nut Salad

:

  • Tear or chop finely all the leftover turkey meat. Be sure to remove the skin and any fat.

Amounts of other ingredients are dependent on the amount of turkey and what you consider a good sweetness level.

  • Add mayonnaise to taste. Mix thoroughly.
  • Dice nuts into small pieces. I usually use cashews, almonds, and pistachios. Mix in throughly.
  • Chop dried fruit like figs, dates, and apricots into small pieces. Generally two or three pieces of each fruit. Mix in thoroughly.
  • I also add raisins, a quarter to a half a cup depending on how much turkey you have. Mix in thoroughly.
  • Once everything is well blended, add four or five big tablespoons of cranberry relish, or cranberry sauce, if that's all you have, so that it is swirled in. For presentation purposes, the cranberry should be seen as separate from the rest of the mixture.

Serve to your guests or package up and put in the refrigerator.

The annual egg nog bread pudding (like the Newfoundland Fries, it's a way to use up leftovers)

Added an egg and milk to the eggnog that wasn't finished before its BB date. This year, it's the challah that started to stale (last year, it was croissants, I think). Added cranberries and small spoons of orange marmalade. Num.
