I mean the writing is a little crabbed, but I can read the whole thing readily. I know they don't teach in school any more, but I don't know when they stopped.

100# Mesh
7# or 8# Salt according to savor of salt
2# Dark Brown Sugar
1 oz Salt Petre or 1 table Spoon
1 oz Block [sic] Pepper or " " "
1 oz Baking Soda or " " "
Mix well + rub mesh in dry mixture
Pack mesh in jar and place weight on top -

What mixture you have left dissolve in water a pail full should cover the mesh
Remove bacon strips in 3 weeks + smoke
Haws (?) can remain 6 weeks, then smoke
Watch your brine for scum

@dnc Good question -- moisture retention is a concern with a raised deck above ground, depending on your rainfall. Around here in my area (hot, warm climate) I'd likely want to line the bottom with something to retain moisture and prevent loss of water through the bottom (heavy duty plastic or?) but also have adequate drainage so it's not a heavy water logged tub.

@dnc On the other hand, I saw one of those in Hilo, Hawaii (with very high rainfall, tropical) to deliberately provide high drainage in an area too wet to support a normal vegetable garden.

I’ve never grown oregano before. @joewynne @dnc Oregano's pretty tough but newly emerged seedlings are fragile; I'd leave it there until it's ready to transplant into its final growing site.

It looks like you've sown in a seedling mix so maybe give light nutrition soon, like a weak dilution of worm leachate or compost tea. As the seed's so tiny, it doesn't carry a lot of nourishment. Just take care not to over-fertilise; the 'standard' Mediterranean herbs (maybe all herbs?) taste much better when they live a tough life.

Now the question becomes: how many grams of uncooked rice make 1 gram of cooked? Which, come to think of it, is kind of ridiculous. So. what is the relationship between raw and cooked? 100 grams of rice, plus 100 grams of water makes 200 grams of cooked?
This could turn into quite the rabbit hole, couldn't it?

First time growing cabbage, and I really didn’t think ahead. There’s at least another wheelbarrow full to harvest and I don’t think fermenting sauerkraut is not the ultimate solution for all this. I have a “cold room”, but it’s about 16C degrees this time of year. @dnc Hmm.... My daughter and I use cabbage as an I ingredient for potstickers and then freeze them for later use. That might be an idea.
