Lots of root veggies, cannellini beans, veg stock, onion, Kecap Manis, topped with sliced potatoes.
Made eough to freeze a few meals for later.

egan dinner Veggie couscous 👉🏼I used pepper, zucchini, squash, eggplant, carrots, garlic, fresh ginger and onion. 👉🏼Mix together with salt and olive oil 👉🏼Broil the veggies for 5 mins. 👉🏼Add a can of roasted tomatoes, 👉🏼Season with salt, pepper and Ras El Hanout- a combination of of Coriander, Turmeric, Cardamom, Sea Salt, Black Pepper, Clover, Cinnamon, Nutmeg, Allspice, Ginger, Cumin and Paprika. 👉🏼Return to oven 400 degrees 👉🏼bake until tender. 👩‍🍳Coucous 👉🏼Add to cups of couscous to 2 cups of boiling water. 👉🏼Cover and let sit. Separate with a fork 👩‍🍳Assembly 👉🏼Put coucous on large dish 👉🏼Top with veg 👉🏼Decorate with toasted almond slivers, dried apricots and fresh cilantro #vegan #marrocancuisine #recipe #vegetarian #dinnerrecipes #healthyfood #healthy #vegetarian

Harvested some of our Chinese chives & bean sprouts. Fried them up with lots of garlic & sprinkles of salt n pepper. It is simple, tasty & healthy. Cooks up in less than 5 minutes.

Safe eats for my Mom & her Type 2 diabetes.

Is needed: • 400 g of thawed seafood • 300 g tagliatelle • 1 bunch of spring onions • 3 cloves of garlic • 2 anchovies • 100 ml of white wine • 50 g of butter • French parsley • 2 tablespoons of tomato puree • 1 tablespoon mixed spice K+ • oil •

Red lentil pizza crust.

This looks easy and apparently is really good for diabetics! (Just add healthy toppings, skip the cheese or use a dairy free version. You can make your own using the recipe linked in the crust recipe).

Boiling purple yams for evening snacks.
This is - when boiled. If baked/fried/roasted, GI goes up.

The average GI of yams are between 35-77 - lowest is from boiling them. Mom can eat one, with whipped butter & not have her blood sugars spike up.

This was my first year growing . We love the taste & they grew well in our sack planters. I grow almost all tubers out of containers because I find it's easier to control & harvest than planting in ground. I will grow a lot more of them, next year. I grew only a few this year to experiment. Grows well in in .

I still have carrots & potatoes to harvest.

18 and are still ripening on the plant. I am still harvesting , the chard is looking nice and I have a handful of small courgettes on the plants. Herbs and parsley are still going. Hardy broad beans are in the ground for an early harvest next year.

The Municipality of Troyan, in Bulgaria, has obtained official status as a registered agricultural producer (usually reserved for farmers).

Mayor Mihailova described the municipal plan to grow good and locally sourced food, which will be supplied directly to the school and kindergarten kitchens.

The Municipality is also certified as a beekeeper and honey producer.

Now that's a blue potato! I haven't saturated this colour. It's exactly as it looks in real life.

It's an organic RiverJohn Blue, grown by a local farmer and bought from the Wolfville Farmer"s Market to Go (www.wfm2go.ca). Blue potatoes are full of anthocyanins, just like blueberries. So good for you and delicious, too.

Easy Berry Chia Jam - Date Sweetened

This is a quick, easy and delicious no cook 'jam' that uses whole food ingredients. I make mine mostly from the blackberries that grow in great profusion behind our barn, sown by the birds many years ago but tended carefully by me now.
