Look, in order for it to be called chocolate mousse it has to be made in, and with ingredients from, a specific region in France.
Otherwise it's just sparkling chocolate mayonnaise.
@sashin So a mousse is an acid (chocolate), fat (whipped cream), and an emulsifier (eggs) that you use to create a fluffy suspension, and so is mayonnaise, lemon juice/vinegar, oil, and eggs. But mostly I'm just being silly.
