In winemaking, CO2 pushes grape skins to the top, where they aromatize into the surrounding air -- resulting in a loss of the tannins and esters that would otherwise be part of your wine.
A simple punchdown, a good stir, is a necessary part in capturing the detail and nuance found in something as simple as grape skins.
No better way to do it than under the sun with @okage1
Good news: First mountain lion to use the new wildlife tunnel under Hwy 17 at the Laurel Curve has been caught on video.
It took ten months from completion of the tunnel in January, but at least one big cat has figured it out. The first bobcat OTOH was seen using the tunnel within 15 minutes of mounting the cameras.
Lots of other wildlife, from coyotes to squirrels, have been using the underpass to avoid traffic on the busy #Hwy17.
Just upgraded the #SSD in my 2012 #MacBookAir from 128GB to 512GB.
Now embarking on the magical mystery tour that will be transitioning from #MacOS#MountainLion to #Monterey.
I may be some time…
