Got a pineapple in the last grocery order. Gonna try my hand at making tepache w the rinds.

Gonna start growing a new plant w the top. Already have a 1:year old plant in a large planter that I started from a top last year. Figure I'll do 1 a year so that I'll have one maturing each year on a 3 year cycle. Bring them inside during the winter and during warm weather, they decorate the back deck.

@msquebanh yeah, we have a couple mint patches too, (Moroccan and peppermint). Mint tea is my fave. So always have plenty of mint during growing season for chutney, grow lots of cilantro too.

Dinner food break. fried spring rolls & rice vermicelli, meal in a bowl.

It's been a real hectic Monday, work-wise. I'm on OT, today & tomorrow. Off on Wednesday ๐Ÿ‘

@msquebanh Vietnamese rice vermicelli bowls are our 2nd fave Vietnamese dish right after pho.

Really enjoy making both. :)

Culinary crossovers: I made a tahini baked fish (tajen samak) for dinner, had leftovers, then warmed it up with soy sauce and chilli crisps to add to noodles

I love finding the intersection of cuisines that are meaningful to me (I spent a lot of the late 00s in the Middle East). There are also more of them than we commonly acknowledge. Chinese moon cakes are probably related to maaโ€™moul

Vanalope,
@Vanalope@socel.net avatar

@skinnylatte I like taking stewlike Mexican cuisine leftovers, like carne guisada or chili verde, and dropping that in a bowl of ramen, Mexican Asian fusion! ๐Ÿ‡ฒ๐Ÿ‡ฝ๐Ÿœ

If you donโ€™t live somewhere with great ramen, this is an excellent at home option. It arrives frozen. Sun Noodles makes ramen for most of the top ramen restaurants in the U.S.

Soup and noodles are as good as a good ramen restaurant

Even if you live somewhere with good ramen, itโ€™s an economical option

I took way too many photos of peacock patooties today. I couldn't help it. All 4 of the peacocks were flashing fluffybutts on ground, on rooftops, on fences, in a tree, atop a shrub - pretty much anywhere & everywhere they could strut with their fluffy, rumpshaking butts & holding up full plumage.

Oh sweet child of spring, yes they can and believe you me, they already ARE trying to attribute common effects of long COVID to everything except long COVID and that's gonna be ramped up as time goes on. The doubling down on minimization absofuckinglutely will continue.

Early evening power drink of choice, to taste test. I bought 3 different new to me flavours from RISE to try out this week.

This is a based & brewed, company. You can find their drinks in most grocery & health food stores.

@msquebanh I def got into making my own kombucha when I was trying every fermented food known to man to try and help w my long COVID gut. It didn't help, but is delicious so I still make and drink it. Enjoy concocting my own flavors too.

Currently ginger, raspberry, mint is my fave. Raspberry ferments and carbonates like a m'effer! ๐Ÿ˜†

Vanalope,

@msquebanh i really liked it when I bought it bottled, but it was too expensive hence why I just learned to make it myself.

See entry also under Vanalope does kimchi. ๐Ÿ˜†

@msquebanh yeah we do now too. Watched a lot of TV when I physically couldn't do much. Fell into a K-drama hole which led me to investigating many different types of Korean foods. I'm very impressionable to tv food. ๐Ÿ˜†

My Korean cooking capabilities has expanded a lot in the last 4 years. Just had jajangmyeon for dinner last night, I know, technically that one is Chinese Korean. ๐Ÿ™‚

Had my disability appeal hearing today. It was a virtual online affair.

I won. First filed in Feb of 2021 after it was abundantly clear that I was not getting better after my March 2020 COVID infection but was only getting worse.

2 rejections later, here we are. My attorney did amend my claim to be for a fixed time frame since I have finally had significant and sustained improvement since starting manual lymphatic massage in July 2023...

I was lucky that I pulled a judge who seemed like an actual human being. I even thanked the the judge at the end for not making this yet another traumatic experience.

My attorney even commented in private after the virtual hearing, that this judge was far more personable than the norm. I told her, after all I've been through since March 2020, I was due for a lucky break.

Ppl do not understand what a long dehumanizing horror show they're in for when longCOVID disables them.

I used to work in biotech R&D so already knew clinicians are not researchers. Even so, the last 4 years as a first waver, navigating long COVID healthcare hell, has still be super frustrating by the utter lack of intellectual curiosity that the vast majority of physicians display.

Vanalope,
@Vanalope@socel.net avatar

@PacificNic This is a tangent but your toot reminded me. Years ago in the before times, I ran my own cottage bakery business selling pies, breads, and muffins at farmers markets.

Sometimes there wouldn't be much traffic so all the vendors had crappy sales. When that happened, end of the market would turn into Barter Town for those w perishable goods. I learned in Barter Town, if you're a GOOD baker, friggin everyone wants to trade with you.
Closest I've ever been to being royalty. ๐Ÿ˜‚
