These are photos from the summer of 1990, when I served as a survival instructor in the Air Force Academy’s SERE program. It was the most intense and best training we had as cadets. SERE stands for “Survival, Evasion, Resistance, and Escape.” SERE was established after the U.S. wars in Southeast Asia, and the experiences our POWs had… to try and equip our airmen with better skills to evade and survive, resist and escape enemy capture in wartime / in a conflict

(1/2) What a fantastic find! We were headed to the Charlotte Oktoberfest festival, but unfortunately, you can’t bring your dogs in. So we looked for a close restaurant on Yelp, with outdoor seating that is dog friendly. I sorted by number of reviews, and found found McCoy’s Smokehouse and Saloon.

I got this 15 pound brisket trimmed, seasoned and prepped last night. Going to do an overnight smoke tonight for Saturday’s dinner!

This may be the first time I’ve prepped a brisket 24 hours before smoking it. Interested to see how much the “dry brine” in the fridge makes it taste even better. (It should!)
