You know, as someone who has been protesting since the early '80s, that lives on the same hill as Columbia, let me just say the idea of outside agitators is ridiculous because I would have loved to have been involved but it is something that is very different than my thing

So there's a lot of mold in the city especially right now for whatever reason I know guys that are growing pot that are having problems and when I don't use hibiscus tea as the base I got a lot of mold at the top of the injera

There's a learning curve It took me a while to figure it out

But I just ate the mistakes with butter and syrup as like a multi-layer crepe pancake sort of thing and got used to what I do and what works for me

The ratio should be 5/6 flour/tea..

It's very inexact

Until you become really good at it and then you know exactly what works for you

But yeah a little more tea than flour...

You need to have some sort of slight warmth or it won't ferment as quickly encouraging more mold

But after a day or two there will be a sour smell and bubbly chaff-like stuff you skim off at the top

You mix the rest up, boil about a cup of water and mix about a quarter cup into that it becomes thick and translucent..

Anything works but a specialized crepe griddle is ideal... But you need a cover for it as well

When in doubt thicker batter, and hotter griddle.

I pour out like pancake, but make a circle with the batter filling in afterward.

You wait until eyes appear and don't go away, then you turn off the heat and you cover it.

Minute or two

Then it's ready
