> It’s Maple weekend in Ontario. Locally, Elmira will be celebrating it's 60th maple syrup festival. But there’s more to maple syrup than pancakes and waffles. Food columnist Jasmine Mangalaseril talked to food and drink professionals in Waterloo Region who use maple syrup in different and unique ways.
'Tis the season for maple syrup making. For any who are curious about the history and process, I made a slideshow video about the process and you can watch it on Vimeo here: https://vimeo.com/548606103
It's just under 6 minutes watch. My voiceover.
My 2024 maple sugaring season has ended and we got 30 liters of sap. There were 2 additional liters that I tossed because it had soured and big, meaty moths had drowned in it. I harvested 36 liters in 2023.
I tapped the tree 2/1 and took the bucket down on 3/17. The height of the flow was 2/3 to 2/10.
After boiling we ended up with a little over 1.5 pints of syrup. Lots of work for not a lot of syrup which explains why this stuff is so expensive!
#Canada's #maplesyrup reserve hits 16-year low
"The strategic reserve is holding its lowest amount of maple syrup since 2008," Simon Doré-Ouellet, deputy director general of Quebec Maple Syrup Producers, told BBC.[...]
amount of maple syrup in the national reserve - stored in tens of thousands of barrels in several warehouses across Quebec - has dwindled significantly since 2020. That year, the reserve had more than 103 million lbs.. only 7% of what it was four years ago" https://www.bbc.com/news/world-us-canada-68657703
"Quebec's strategic reserve of maple syrup, a trio of vast warehouses that typically hold tens of thousands of barrels, is nearing empty after a couple warm winters collided with a pandemic-era spike in demand." #MapleSyrup#food#climate
We visited a Maple Syrup "sugar shack" yesterday and "Glen" gave us a great tour of the sophisticated process. They produced 1,449 gallons of syrup in an abbreviated one month season this year due to a warm February. Had a "shot" of maple syrup on St. Patrick's day. Bought a lot! #OswegoCounty#NewYork#MapleSyrup
Oddly this was because I was trying to think up a very French-sounding name for a #CyberpunkRED NPC and I came up with the name of a man involved in the theft of maple syrup from the reserve with a street value of at least $18,000,000.
