@makkhorn about 15 years ago someone suggested to me that an entire generation (or more) of US people had their mental and cognitive abilities significantly diminished due to lead (pipes, paint).

It has not escaped my attention that a lot of these people are now at the age where they are at the levers of power and decision making or at least trying to desperately call the shots. ¯_(ツ)_/¯

Perfect for a wet dreary evening: pakodas appetizer - mostly onions, chiles, cilantro, and some besan (+salt, chile powder) to bring it all together. Enough liquid in them onions to wet and hold it all.

Works great - fairly quiet.
Parts cost about USD$130 (with an extra set of filters for later) with as much as possible from local hardware store

FDA Removes Harmful Chemicals From Food Packaging

The FDA "announced the removal of the endocrine-disrupting chemicals (EDCs) per- and polyfluoroalkyl substances () from food packaging.

Issued on February 28, 2024, "this means the major source of dietary exposure to PFAS from food packaging like fast-food wrappers, microwave popcorn bags, take-out paperboard containers, and pet food bags is being eliminated," the FDA said in a statement."

So at the risk of sounding like an old guy, the news that you see at CNN, MSNBC and Fox News wasn't always like that. News as entertainment started at CNN's 24 hour beast that had to be fed.

Once there was this guy, who closed with "That's the way it is" and you could actually believe him without question.

He was called "The most trusted man in America". POTUS Lyndon Johnson said once, "If I've lost Cronkite, I've lost America."

@stationkeeper Indeed - it's the 24 hr news cycle beast - that really gained power (in my memory) during the 1st Gulf War. This 24hr beast and the war complex have just devoured society and minds.
There's no processing and that, afaik, is not 'journalism'

A tiring and tiresome day because I was working on my computer on work stuff (for my class) almost all day.
So at least I'm glad I set this 30% rye dough up for a slow ferment last night (70% hydration) and not much kneading required. Got to it again only late in the afternoon so it's not going to cool in time for dinner.
Oh well we'll enjoy eating it tomorrow, for now enjoying how pretty it turned out

Got to yesterday's loaf ☝🏽 - a touch dense (rye is like that I suppose) but terrific flavor - tried a bit from the end warmed with butter.
Most of it got sliced and with yesterday's 'quick' cooked sauerkraut* some improvised Russian dressing and Swiss along with steamed up fauxtrami (home rubbed & smoked store corned beef) from the freezer. Emminently satisfying umami rich super tasty sammich

Saw the first bees of the spring today. I don't think I've ever seen bees in February before, but it was 60F here and the species crocus were in full bloom.

"Sekmai - Traditional spirit of ". Was a gift so don't recall the price. Tasted no different than Sake (Warning: I'm not a connoisseur of drinks so don't take my word).

Wonder what has become of it. The bamboo basket cover was quite unique.

Simple, post long-week of home smoked sausage (½ is plenty tonight‡) and winter pantry slaw [cabbage, 🥕, canned 🌽, scallions, jalapeño, canned olives, yogurt/garlic/vinegar dressing], gemmeli with a bit of jarred Rao's marinara* (+ fresh grated Parmesan)

*I've gotten over begrudging how good this is for the price, so it's in pantry to use in a pinch

Partner made first while I had the kids out today - (baked) apple crisp with honey bunches of oats (the only cereal we have around) topping. Fresh whipped cream.
Kid1 is missing Japan and the parfaits at Lawson so fixed hers accordingly

Simple steamed branzino for - 12 min steam then pour over the soy sauce (with scallion whites, ginger, shaoxing, sugar), then top with cilantro, scallion green (threw in a chopped serrano and used up last bit of some Thai basil) - pour a couple of table spoons of hot/smoking oil on top.
With rice and sauteed beans.
May not exactly be "comfort food" but sure is comforting. Finished it all, clean to the bones

The people who exploit Amish life as a tourist attraction have a target market: Christian Nationalists.

The Amish are deeply committed to pacifism: many went to jail as conscientious objectors to America’s wars -- and they won’t even sing the National Anthem.

But Amish Country souvenirs are covered in the Stars and Stripes, and include many tchotchkes featuring extreme gun rights slogans.

And the trend is accelerating.

@KatM @TheConversationUS I think the graphic with the toot is misleading. The article also says "Amish souvenirs" but does note that it is the "Amish brand" that has been co-opted and "Importantly, the Amish don’t own the big Amish-style restaurants or gift shops or hotels."
