Different types of gingerbread are made all around the world (and some don't even contain ginger). Food writer Anne Ewbank writes for Atlas Obscura about varieties like Mexico's cochinitos, the Netherlands' pepernoten, Germany's printen, and parkin, the tasty, treacly treat that's made in the north of England and mostly eaten around Bonfire Night.

For the first time, my nephews (9 and 11) participated in the construction and planning of our gingerbread, instead of just the decoration.
They chose to make a gingerbread Minecraft creeper in a green Santa hat.
It collapsed during construction. Chaos ensued, and it became a medusa creeper vampire, who got trapped in a Minecraft fence, and whose hair is falling out from stress. They are non binary.
If any one is looking for a recipe for soft gingerbread cookies, this has been my go to for over 8 years. When I ask my young nephews and niece, “What do you want for your birthday?” instead of a toy, they ask for these.
