Seeking eggplant recipe ideas, as I have one limp eggplant in the fridge and 8 eggplants growing in hydroponics (which may produce a massive amount of eggplant).

So far my repertoire includes 2 dishes:

  1. Eggplant Parmesan (Italian)
  2. Eggplant in Garlic Sauce (Chinese)

(the family hates eggplant, except me, so we never eat it 🤔 )

@ai6yr eggplant is one of our gotos. Lots of good suggestions above in other comments.
Yuxiang eggplant is one of our Chinese favs -- more kick than just garlic sauce.
Of course, all the Italian style eggplant bakes: lasagna, parm, slice, grill, put on pizza.
All the middle-eastern preps. Bana ganoush is a winner.
This is a clever eggplant dish that happens to be plant-based (I use dried beans that we grow instead of lentils. Cause then it's even more home grown)

@TonyStark @GreenFire As I look back to when I was that age and pretty passionate about political issues, I think my moral compass was pretty spot on. And I had no understanding of the complexity of improving things w/o fucking it all up. I also thought that the news I was getting was both true and the whole story. I really had no idea how much goes on in the background. Would have been a disaster if I'd been setting policy ...

Where do you live and how do you feel about it?

Obviously, don't tell me exactly where you live, no actual addresses please! You can be as vague as you like.

I live in Central Missouri in the U.S.

Pros:

This is an absolutely beautiful place, green rolling hills, lots of rivers, lakes, ponds, and natural springs, cool caves to explore.

Lots of farming here, so great access to quality fruits, vegetables, meat, eggs, and dairy.

It's relatively inexpensive to live here compared with other states, because it's a "flyover".

I'm close enough to three major cities, that it's an easy day trip, and I'm about halfway to anywhere in the U.S.

We have one of the best Conservation departments in the U.S. and this is one of the few things that is a bipartisan issue. Lots of awesome nature programs that are free or cheap, state parks, conservation areas, bird watching, hunting, boating, foraging available to everyone.

Cons:

Yeah, it's a big one, it is a RED STATE, while a lot of the cities are blue, there is a large rural population, that votes red. Abortion is not legal here. People often vote against their own self interest.

While I'm not against responsible gun ownership, lots of people aren't responsible, and people have access to guns that definitely should not.

We have very few employee protections here, while the cost of living is relatively low compared with other places, it's taken years to get to a $12 minimum wage, and it's still not enough.

@RickiTarr In rural Boulder county Colorado.

It's beautiful here, we have easy access to the mountains: Rocky Mtn Nat Park is a 45 min drive and we're hiking. Denver is the biggest city for quite a distance and Boulder is a college town so we get all the cultcha stuff here. Big garden, a couple acres of property, nice place. Weed is legal.

Downsides: Boulder area is very very white. Boulder itself has been overtaken by techbros, google money, and NIMBYs. Our public transport sucks.

@arisummerland @RickiTarr that's a good part of why we live out of town.The transportation tradeoffs are the biggest downside. But, we have a lot more here than we could ever dream of affording in town ...

Or course, it helps that we bought this place decades ago. When it seemed crazy expensive and looks really cheap now.

In CO, vast numbers of streams are temporary or ephemeral, flowing only after major rainstorms & during spring runoff season. The Sackett decision said only wetlands that had a surface connection to continually flowing water qualified for protection. Many wetlands in CO have a sub-surface connection to streams, rather than one that can be observed above ground.

With the passage of this bill, CO wetland & ephemeral streams are once again protected.

Trump has called climate change a “hoax,” and his admin weakened or wiped out more than 125 env rules in 4 years.

@ai6yr @jhv I don't understand this complaint.
Sure, volume != mass. The circled lines in Joe's first post illustrate the absurdity.

But, when cooking & esp'ly baking, it's very convenient to have guidelines for converting an old-style by-volume recipe to one where you weigh ingredients.
So, yeah, explaining that volume != mass would be correct in the best sense of "technically correct" and as usual, would not be useful. So, seems like copilot did the right thing here.

What am I missing?

    @RickiTarr When looking at historical life expectancy numbers, it's worth remembering the gawdawful levels of infant and child mortality.

    As I understand it, people who made it into 30s lived as long as many of us do now. Just an awful lot of people died in their first year or first 10 years, and that pulls the average (which is the life expectancy number) way down.

    Which means plenty of people with menopause a century ago...

    Ah, so far so good. Stihl FSA57 trimmer (battery powered) works very well.. VERY quiet. Cuts the mustard (which my corded trimmer does not). Extremely lightweight, compared to every gasoline one I've used before. It was a project to order it, though. I'll probably be ordering a second because a spare battery plus charger is almost the same cost, and that will include another head, too. 🤔

    Did half of the weeds on my hillside to try it out, in almost no time. That usually is a long project for me due to hassling with line, power cord and/or gasoline. Really good build quality. This model is light duty/homeowner (but we are just using it for bee yard clearing).

    @ai6yr Over the years , I've gotten better about taking the stuff that's too big and putting it straight in the compost. Figure that way I'm still eating it, just next year ...

    @Lizette603_23 my spouse grew up eating kreplach and has many fond memories of them and her ukrainian bubby making them.
    I finally figured out a good kreplach recipe and so we've got a stash in the freezer now.
    And I use the pot sticker Chinese dumpling technique like you describe to cook them. Works like a charm. (And don't tell Bubby.)

    @GGMcBG @TonyStark I think Biden is a much better president than Gore would have been. And awful as GWB was, trump and esply a 2nd term trump would be much worse.

    There was no question that more of us should have voted for Gore. And there is even less question about who to vote for this year ...

    Which is a pretty stupendous number for the model that's supposed to save the company and was worth cancelling their lower cost model for.
