Seeking eggplant recipe ideas, as I have one limp eggplant in the fridge and 8 eggplants growing in hydroponics (which may produce a massive amount of eggplant).
So far my repertoire includes 2 dishes:
Eggplant Parmesan (Italian)
Eggplant in Garlic Sauce (Chinese)
(the family hates eggplant, except me, so we never eat it 🤔 )
The reason for the extra eggplant in hydroponics is (theoretically), they will be diversionary eggplants for the squirrels, who decimate peppers but prefer to get high on eggplant leaves. (h/t @BakerRL75 for the idea, I believe). So may also have ZERO eggplants. #eggplant#gardening

I get the Japanese eggplants. Cut them in half, baste them in a light sauce of miso paste, and then broil them. I do the broil by feel but it is about 5 minutes a size.
The start of #Obon, I've set out the #eggplant cows on the front stoop. They will carry our beloved ancestors to the living world to visit with us these next three days. To be honest, the Deer People will likely come by and eat the nasu.... XD But it is all symbolic so it is enough to set them out. I love #eggplant every which way, but yuxiang 🍆 is pretty special. Too hot (and fragrant) for indoors. Cooked per Dunlop recipe more or less - fry up salted, rinsed eggplant (3 batches), cook the douban (I used pork fat), then chopped ginger & garlic, add chicken stock (minors) + soy + sugar, add back 🍆, add chinkiang vinegar, potato starch slurry to thicken, scallions.
The first flower of my Long Ping Tung eggplant (best eggplant ever!) opened this morning.
I grew this and a Little Fingers eggplant from seed during the winter. 🍆 🍆
