Slowly launching the day. Glad I thought ahead and soaked some navy beans yesterday, so I can start some baked beans today.
We eat lots of beans, pulses, legumes etc throughout the year, but I only do the classic Canadian baked pork-and-beans once or twice a year, typically in the dead of winter.
Okay, so #ComfortFood time! Making Grandma Linder's Chicken Noodle Soup! Now sit and smell it for 60 minutes until I add the noodles! 🙏
ps: see that container in the upper right? That's bacon & pork fat! Yes, the real thing. Thank Grandma Linder for teaching me that everything can be improved with lard! 😉
Spinach & Artichoke Mac & Cheese Bake. I love artichokes so this was the first recipe I made from my new Half-Baked Harvest cookbook. Pretty easy way to make mac & cheese and it wasn't dry like some other pasta bakes I've made! #cooking#Cookbooks#artichoke#ComfortFood
"And the restaurant right off 1-55, at the first Batesville exit, where Highway 6 takes you to Oxford, has the best pecan pie and sweet potato pie on earth. They only sell it by the slice, though, and on my worst days — which were also my best days in Oxford — I’d drive down to Batesville, pick out two pieces of each."

For our brunch today. Only 1 is left. I gobbled up 2 of them, pretty quickly. It's one of Dad's fave dishes & every time I make & eat it now, it reminds me of when we ate them together. I miss mealtimes with my Dad a lot.
This was my late #dinner last night. Some #homemade#beef#stew. Beef is from my friend's small farm just outside of Nanaimo. Vegetables are from my backyard food garden.
