Slowly launching the day. Glad I thought ahead and soaked some navy beans yesterday, so I can start some baked beans today.

We eat lots of beans, pulses, legumes etc throughout the year, but I only do the classic Canadian baked pork-and-beans once or twice a year, typically in the dead of winter.

It's been raining and cold here, so I started the dough for some sourdough bagels last night and it was such a good choice.

My house smells... AMAZING.

I've heard bagels intimidate a lot of folks, sourdough doubly so. But I've honestly found them the most fail-proof baking I've ever done.

Here's the recipe by Emilie Raffa, although I highly HIGHLY recommend her book "Artisan Sourdough Made Simple"

Spinach & Artichoke Mac & Cheese Bake. I love artichokes so this was the first recipe I made from my new Half-Baked Harvest cookbook. Pretty easy way to make mac & cheese and it wasn't dry like some other pasta bakes I've made!

A very improvised dinner tonight with what was on hand. A bowl with:

  • Pearl barley
  • A mixture of acorn squash, sweet potato, beetroot, spring onion, and garlic with some cumin, chili flakes, and turmeric
  • Falafels made in an appam pan
  • A smidge of feta.

We are tentatively calling it "Autumn Half-Moon Buddha Bowl" (vegan without the feta) 🤗

I get odd looks drinking a Nitro coffee stout mid-summer, but it’s my groove. Keep your hazy IPAs and sours, ya dang millennials 😀
