Some things planned for today, all easy to cook.

Fennel and white bean salad (Indian style), Marcha nu Shak (capsicum stirfry with chickpea flour and peanuts), and Shahi Gobi (a cauliflower dish).

LifeTimeCooking,
@LifeTimeCooking@mastodon.au avatar

and instead of the capsicum dish I made rasam with the horse gram I sprouted overnight. The sprouts are cooked first (best to cook horse gram sprouts), and I used the for that. Then most are blended with spices to make a paste. Than they are all cooked together with other spices, tamarind, curry leaves etc. Horse gram makes dark dark coloured dishes. Very earthy in tasted. Delicious. Very healthy.

Made vegan chili from the Vegan Instant Pot Cookbook by Rainbow Plant Life (Nisha Vora)! Omitted the oil and added spinach (cooked it along with the mushrooms and bell pepper so that most of the water was cooked off).

A few things from the weekend cookup. First, Rajma, a kidney bean curry. This was so awesome that I'll make it again soon. Not usually a great fan of kidney beans, this dish might have changed my mind.

I cooked the kidney beans in the , so easy and convenient, and perfectly cooked.

Gujarati Dal, another great dal from this book, made with toor dal. Again, the dal was cooked perfectly in the , to the point of disintegration - just how to cook it for Indian dishes as it develops s silky smooth texture at that point.

I cooked enough toor dal to put some in the freezer.

Once the lentils were cooked, the dish came together pretty easily with a tadka made first, then the lentils added

The recipe for Tadka Dal is a winner, from by . Lovely to have the pressure cooker instructions along side the stove ones.

Added some greens to the dal, as suggested in the book. Served with rice, roasted okra, sauteed spicy eggplant, pickle, yoghurt.

A worthy dinner to get into the swing of an extra long weekend.

I made some pumpkin-carrot soup in the InstaPot yesterday, and it was perfect from my brain-addled state of illness. I had a couple of bowls.

But I guess you can't expect 8 mins of high pressure cooking to replicate the deep flavours of longer slower cooking on the stove, where the aromatics and spices have time to develop flavours, and you can add as you go.

I have a cupboard full of flavourings that I've made from the garden and other stuff that I pick and choose from when I am cooking. Hard to replicate that in a pressure cooker, I guess. Or maybe I just haven't learn the techniques yet.

If I have the energy today I'll make an eggplant dal dish with the slow cooker function.

Doing some pressure cooking in the Instant Pot with potatoes, carrots and ham. Once the 20 minutes is done it will switch to the slow cooker mode. It should smell very good onceI open it up.

I'm a solo householder, but I still buy whole chickens as they're cheaper per pound - and then I cut em up into parts for the freezer. This also leaves me with trimmings (neck, back, wings) to toss in the Instant Pot for chicken soup.

@deborahh I love mine & even make brisket in it! Fun story about how I got on the bandwagon:

My teen had to make a full Costa Rican meal & film the process, with narration, for 10th grade Spanish. We googled some recipes and the teacher picked one.

When purchasing ingredients I noticed that the recipe was for an InstantPot … & we didn’t have one! I quickly ordered it over Amazon.

The dinner, Costa Rican Chicken Stew, was a hit. Here’s the recipe: https://www.recipesfromcostarica.com/recipes/instantpot

simon, to accessibility

So in news that definitely did not surprise me at all, the remote app for my current instant pot just got removed from the app store.
I know blind people love instant Pot, but listen. They're a shitty company that makes shitty smart products that are obsolete within 5 years maximum. Look at this e-mail:

> To enhance your user experience, we will be retiring the outdated Remote Control for Smart Wifi app by September 30. We want to ensure that you have the most seamless and enjoyable experience when using our products. We understand that change can sometimes be challenging, but we have exciting news! As a token of our gratitude for your loyalty, we're thrilled to offer you an exclusive opportunity. Enjoy $100 OFF on our brand-new Instant Pot® Pro™ Plus 6-quart Smart Multi-Cooker.

Translation: Your old thing is obsolete, so here's a discount on our new thing that will probably also be obsolete soon.

I don't care how convenient it is, we've been burned twice--the most recent being a slow burn as the app in question has barely functioned for the last two years. The company does not respond to accessibility requests. How much more evidence do you need?

The non-smart Instant Pot is almost usable without an app if you do some memorization. If you're going to get a pot, just get one of those instead.

Thanks to the wonders of Apple, you will not be able to install this app on any future devices. When I replace my phone--which I will likely do within the next couple of months--that app will be gone, and so will my equal access to a fairly expensive instant Pot.

I'm not going to buy another one. Ever.

This is my new favorite cook book and the Instant Pot is my new favorite kitchen appliance. I can't believe I haven't tried an instant pot before now. Just cooked dry beans in an hour instead of all the pre-soaking and cooking on the stove for three hours. The mushroom risotto in this cookbook may be the best thing I've ever made.
