Making one of my favorite soups on a slightly overcast day: Moroccan lentil and chickpea soup. I first saw this in Cook's Illustrated April 2018. This online version matches it. The seasonings are so fabulous!

I have so much locally grown quinoa in my pantry and IT IS TIME TO USE IT. I also have many other grains, many locally grown in the Willamette Valley (Einkorn wheat! Farro! Emmer! Blah blah BLAH!), and about 30 kinds of beans and lentils. Would like to deplete much of the pantry this summer for restocking from my local "Fill Your Pantry" farmers' event this fall. SO, mastodon buddies, if you have recommended or and/or , lay 'em on me!

Late, by today's main meal was a Libyan dish with Italian influences ~ on the surface it's a pasta and chicken dish in a tomato sauce.
What makes it different is leaning heavily on bzaar, a spice blend that is used in several countries in the region but I've modeled mine after an UK Libyan company (shipping costs are insane)

Anyway, for guests I'd have a piece of chicken per person, but for the two of us cut-up is easier for several reasons

I've been sick for a while and not doing a whole lot of posting online since earlier this month...but I have several things I want to tell you about now; I've been savin' 'em up!

I'll start with tonight's delicious fiasco. I was having a beefy gravy veggie type thing I made up by mixing together some leftovers and thought I might like some "bread" to go along with it. So I put some stuff* into a bowl, as I usually do, and then I thought to myself, "I would like some form of crisp toast rather than bread, I think I'll see if I can make this in the panini press instead tonight!" So I made sure the plates were nice and hot, gave 'em a spritz of avacado oil, spooned the batter in, and closed the top. When I thought they were done I tried to open it and discovered I had evidently made GLUE! Oy! That never happened using my "red boat" (coolthings.com/red-copper-5-minute-chef-cooking-appliance)! Pete to the rescue as usual, and when he was done I had a pile of chunks and crumbs...STILL, all was not lost, they were very crispy and delicious mixed in with my leftovers!

Typically I make my "bread" in the convection oven or the red boat (nickname courtesy of my 3YO granddaughter) and it's never a problem. While I never measure anything, here is what I put in it and it's always been great!

*(amounts are approximate)
½c shredded mozzarella
¼c egg whites
1tsp baking powder
2Tbsp psyllium husk
2Tbsp pork rind crumbs
2Tbsp sour cream
1Tbsp olive oil
¼tsp garlic powder
Let it sit for a few minutes after mixing well until it thickens before cooking in a greased baking pan, muffin top pans, or your choice of bakeware; bake until fully set and browned on top.

Someone should make a site like that, but for food and recipes that are mentioned in non-cooking shows.

I have tried steaming and baking, and had mixed results with both.

I have fresh VWG. I’m looking for a beef-like protein for use with sauce in a stiry fry or grilled with dipping sauce, a la satay.

OK THE FEDIVERSE needs a client/app, because are some of the most broken things on the internet rn.

  • tabular ingredients with explicit and gestural (a pinch) units
  • serving size with the ingredient quantity multiplier
  • open ended typed metadata fields for cooking/prep times, tools required, preheat temps, difficulty, cuisine type, dietary restrictions, etc.
